For the Brown Sugar Topping:
1/2 cup Unsalted Butter
1 cup Brown Sugar
2 tbsp Heavy Cream
1/2 tsp Flaky Sea Salt
6 slices Pineapple
6 Maraschino Cherries without stems
For the Cake:
2 and 3/4 cup Cake Flour
3 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Salt
1 and 1/2 cups granulated Sugar
1/4 tsp Ground Cinnamon
3 large Eggs at room temperature
1/2 cup Milk at room temperature
1/2 cup Sour Cream at room temperature
1/2 cup Pineapple Juice
1/2 cup Vegetable Oil
1 tbsp Vanilla Extract

Top of the morning AB to your family also! The best flour to use is King Arthur cake flour it’s unbleached and I have been using it for a long time. Now I started out as a baker many years ago - one of my speciality cakes was “pineapple upside down cake and any pound cake - carrot cake. Wonderful using parchment paper it helps with keeping it not sloppy when flipping it out of the pan. 🙏🏾

Last time I tried to make one of these...well. Let's just say it didn't go well. You always make things look so easy. I am going to try it your way. Thank you! Mom made Pineapple Upside-Down cake when I was very young, maybe 60 years ago... she made it in a cast-iron pan. To this day I don't know how she kept it from sticking, but it always turned out wonderful... with a cherry inside each pineapple piece.
Im 70. Have you ever had the lemon cake with the clear lemon icing? O haven't seen one in years and can't find the recipe. It was always a hit at family reunions and I wish I had gotten my Grandma's recipe! May she RIP!
