Instead of mixing the scrambled egg with the tuna, we always topped the tuna with an over easy egg. Also, sautee the onion first as to not risk the garlic burning and creating a bitter taste. Over all great recipe, been a family favorite for many years

This looks yummy! You could give it an asian twist if you wanted, by adding soy sauce instead of salt, chopped green onions, maybe some chopped ginger, some cilantro and maybe a teaspoon or so of sesemi oil. I adore asian food so I'm always turning recipes asian (or Indian). Last night I took a container of frozen homemade vegetable beef soup and turned it Indian by adding some butter, chopped ginger, and garam masala.

I encourage those afraid of a fishy canned flavor to pan sear the drained tuna to almost brown or crisp, in olive oil separately. Then sauté the wet onion/veg. You want to cook off the canned moisture fluid and canned flavor. Adding salt and seasoning as it sears will turn canned tuna into a fresher non canned flavor. Really respect your fearless method of tuna and eggs! Keep the great ideas coming! Green onion would be a great garnish. : )

Jail Food if ever I've seent Jail Food... Healthy though... Oddly intriguing.
#1. Do onions first, and cook them longer than the garlic.
#2. Garlic WILL become bitter if fried too long.
#3. If possible Chunk White Tuna in Water - from the can...
#4. Imo, mixing the eggs prior to combining with tuna onion garlic pile...& then stirring just till eggs are no longer runny... Hint, turn heat down as you add the egg slurry....this would keep eggs from drying out, (over cooking)...
$tep up the game & use Corned Beef Hash vs the tuna. 🤔🤜🤛😊
