    I'm with treasuresnowsndthen below... Steam, don't boil and dump all the nutrients down the drain and risk ending up with soggy " potato" salad.
    I haven't boiled anything since I remembered steaming from home EC back in the 60s.
    And when you're chopping up your cauliflower, you can separate the stalks and French fry or air fry them.
    And I almost forgot my best tip for flower salad, add extra boiled eggs but make the dressing as if you're making deviled eggs. You won't believe how good this is.
    Has anyone ever gotten enough deviled eggs? Imagine a whole bowl of deviled egg potato salad!

      I tend to go overboard when steaming, or just forget about the pot for too long. I prefer to blanch my cauliflower in boiling water for just a minute, and then use a slotted spoon to drop in cold water (or ice bath if I feel fancy).
      For me, this yields the most pleasant, fork tender but not mushy result, and doesn't smell like farts in the fridge.
      I do this when cooking imitation Chinese carry out chicken and broccoli.
      I made cauliflower this way for a loaded baked fauxtato salad with cheddar, bacon, ranch and green onions. I brought it to a cookout with a bunch of non keto people, just to be sure there would be something I could eat besides burgers and hot dogs. They cleaned out my whole casserole dish!! I was glad everyone liked it and I didn't have to take any back home. The regular potato salad was still sitting there 🤪

    Made this by baking cauliflower pieces in oven for 20-25 minutes. I like the bit of brown it gives it. Also add some crumbled bacon to taste. A favorite. So good.

    I like to steam mine out of water that way the "potato" salad isnt drowning in water

    This is fabulous! Better than potatoes. I used the Instant Pot with 1 cup of water and a steamer basket for 0 minutes.

    Hi, I have made this recipe so many times. It is always a hit. I tried several others before this one. I do use the instant pot and leave my cauliflower whole, cook it, then cool it down, then cut it up. I also add sweet pickle relish because my Mom did. I love it.

    Made yesterday went easy on mayo next time will use Greek yogurt less fatty also made cauliflower too mushy so better to steam

      In my opinion the texture is more similar to potatoes if it's very soft, but you can steam it, too. The texture has more to do with how long you cook it, it could be soft or crisp tender with both cooking methods.
