    -RECIPE-
    BAKED BEANS
    ▪175g/6oz chopped bacon
    ▪150g (1medium) white onion, small diced
    ▪50g (2 small) jalapenos, small diced
    ▪15g (5-6 cloves) garlic, minced
    ▪325g or 1.5c ketchup
    ▪100g or 1/4c molasses
    ▪50g or 1/4c brown sugar
    ▪30g or 1 3/4Tbsp worcestershire
    ▪30g or 2Tbsp yellow mustard
    ▪30g or 2Tbsp hot sauce
    ▪20g 1Tbsp + 1/2tsp apple cider vinegar
    ▪7g or 1Tbsp chili powder
    ▪2g or 1tsp black pepper
    ▪2x 425g/15oz cans cannellini beans with liquid
    ▪4x 425g/15oz cans cannellini beans, rinsed
    ▪200-400g or ¾-1.5c water
    Add bacon to a heavy bottomed pot over medium heat. Stir and render fat for 10-15min until golden. Add in diced onion, jalapeno, and garlic. Stir, scraping up any bacon fond. Cook for about 10 min or until veggies have softened. Add ketchup, molasses, br sugar, worch, mustard, hot sauce, vinegar, chili powder, and pepper. Stir to combine. Add beans and about 200g water. Stir. Add additional 200g water if needed. Gently stir and bring to a simmer. Load into a 350F/175C to bake for 90 minutes, gently stirring 2-3 times during baking. Beans are done when thickened, but still a little saucy. Add water or sauce to thin slightly if needed.

    CREAMY SLAW
    ▪500g or 9c cabbage, thinly sliced
    ▪100g or 2 large carrots, julienned
    ▪100g or 1 small bulb Fennel, thinly shaved
    ▪100g or ½ small red onion, thinly sliced and rinsed
    ▪3-5 cloves garlic, minced/pressed
    ▪30g or 1 3/4Tbsp salt (for cure)
    ▪20g or 1 2/3Tbsp sugar (for cure)
    ▪150g or 3/4c mayo
    ▪30g or 2Tbsp grainy mustard
    ▪30g or 2Tbsp apple cider vinegar
    ▪30g or 2 1/3Tbsp sugar (for dressing)
    ▪2g or 1tsp black pepper
    Combine veggies and garlic in a bowl and mix with the 30g salt and 20g sugar. Cover and allow mixture to sit and cure for 30min. Transfer to a salad spinner and spin to drain. Transfer back into a dry bowl. Add mayo, mustard, vinegar, 30g sugar, and black pepper into a high sided container (or blender) and blend with immersion blender. Drizzle most of dressing over the slaw mix and fold to toss. Add more dressing to taste if needed.

    STREET CORN (Elotes inspired) SALAD
    ▪1000g or kernels from 8 ears sweet corn, cut from cob
    ▪Neutral oil (avocado, canola, grapeseed etc)
    ▪Salt
    ▪75g or 2/3c cotija cheese, grated
    ▪20g/1 jalapeno, small diced
    ▪35-40g or 1 bunch of scallions (middle green part only)
    ▪20g or 1 med bunch cilantro, chopped
    ▪1 lime zest and juice
    ▪2-3 cloves garlic, minced/pressed
    ▪100g or 1/2c mayo
    ▪50g or 1/4c sour cream
    ▪2g or 1tsp black pepper
    ▪2g or 1tsp chili powder
    Preheat large cast iron over high. Add about 3Tbsp neutral oil followed by the corn kernels and a large pinch of salt. Cook for 90 seconds then toss. Cook for another 3-4 minutes, tossing every 90 seconds. When corn beings to pop, it should be caramelized and done.
    Transfer corn to a bowl and allow to cool slightly before dressing. Add in jalapeno, scallions, cilantro, lime zest and juice, garlic, mayo, sour cream, pepper, chili powder, and cheese. Stir to combine. Taste for seasoning - adjust with salt or lime juice if needed. Garnish with additional cheese.

    fun fact: when you remove corn from the cob and dress it up elotes-style, we mexicans call it "esquites"
    the added benefit being that a word with a "skeet" sound in the middle of it pairs perfectly with your corn-shucking and peener-dicing

    We made the street corn for our family Easter BBQ cookout and it was a HIT. We really wanted something different from the usual mayo based potato or pasta salads, something with some crunch to it. This really hit the mark with texture and wonderful flavor. The only deviation we did to the recipe was to roast the diced Jalapeno in with the corn - it just made sense to us, don't know if it really made a measurable difference in the outcome. But it's an unqualified success and now has a place in my favorite recipe binder to be repeated often. Thanks Brian 🌽🌽🌽

    Brian, quick suggestion for cutting corn off the cob: Use an angel food cake pan. The tube on the inside of the pan is high enough to suspend the cob above the kernels so you can easily cut them off AND SMALL ENOUGH in circumference that you don't risk knocking your knife against it with every slice! Ain't that great? Test it out and let me know what you think.

      I use a corn stripper. It might be 1 more object in the utility drawer, but it strips all the corn off a cob within about 4 seconds.
      You just need to hold the corn vertically over a tray, place the corn stripper on top then just put force downwards.

    I've done the corn recipe three times now. The second time was at my father in laws' 80 year birthday and it was THE GREATEST HIT! I can't even remember how many people gave compliments for it 😄

      @@avp_ I think I've done it the same day, a couple of hours in advance every time. My partner says it is usually even better after a day in the fridge when we eat the leftovers.

    If you can't get cotija cheese, I'd recommend grated Parmesan- it's salty and has that powdery texture and compliments the ingredients well.

    Back for my 3rd or 4th time bringing the Street Corn to a family gathering. Do this one folks, it kills every time and is so easy. PS - I cheated and used frozen corn last time and you just need a little more time at a lower heat at first to thaw, then carry on like the recipe. Great stuff!

    Baked beans is my favorite!! It is very close to our cuisine (on the Balkans, Bulgaria to be more specific). We have a ton of ways to prepare it and one of them is baked in a clay pot, looks very similar to that one you prepared.

      @@krono5el Totally agree with you! I can't imagine that world. Since these cultures came to Europe, they are a staple here on the Balkans (especially beans, potatoes and tomatoes). A lot of traditional recipes include them and actually they grow very well here. Corn too, but we don't use it as much as the others.

    This elote recipe is dope! I use a bit of red onion in place of the scallion, diced fine and added to the corn as soon as it comes out of the pan. Sweats it just enough to mellow out and DANG is it good!

    I made the slaw twice. I didn't like the fennel. So the second time didn't use fennel. Everybody loved it. I am going to do the corn in a few weeks with my St. Louis smoked ribs and pulled pork, collards, potato salad and street corn. I will have hush puppies this time.

    I made the Mexican corn side and served it to three people at Tanglewood in Lenox, MA for the 4th of July. they enjoyed it.
    only use 1/4 of the jalapeno pepper.

    I'm from South Africa and I must say we do similar sides. Curry tomato sauce style baked beans and a sweet and savory coleslaw with our braai(BBQ), my mother in law actually does this weird thing where she adds cherries and marshmallows with mayonnaise, the corn thing I'll definitely give a go looks delicious and spicy. I really like your recipes and I'm going to make all 3 of them this weekend when I braai steak, chicken, wors(south african sausage) and garlic bread.

    After watching you make the beans and realizing a good number (but not all) of the ingredients were similar to something I've made for years, it piqued my interest and I decided to give your version a try and see how it changed my own recipe. It is different in a great way, more heat to go with the sweet in my own. We actually had it with fajitas today, along with some Mexican rice. We absolutely loved the beans -- total winner of a recipe, and I had to come straight here and thank you so much for helping to make this pre-Fourth dinner fantastic! The corn and cole slaw are up next for sure, before summer is over.

    So far I’ve made the baked beans for the family and boy was it a hit! Sweet, smoky goodness with just the right amount of heat! These will replace my family recipe! Can’t wait to try the slaw & corn next.

    I think most cooks would cry to see my one, and only, knife that is not just for food prep, but also opening packages and occasionally a makeshift flathead screwdriver. I just sharpen it whenever I need to. Best $10 I ever spent.

    Another winner! Tried the street corn salad (paired down for two) and wow! Super yummy! I used a finely diced white onion and Serrano from my garden instead of g.o. and jalapeño.

    A couple tasty options.... I do my beans similar, but I'll use unseeded jalapeño and or Serrano, as well as dry mustard, and a small can of CRUSHED pineapple. I'll smoke that for a few hours and it's smoky, delicious and spicy. Also, if you take some rib skirt or extra pulled pork and chop it in there you have a meal. Trust me it's awesome!
    Also, what's your thought on celery salt in the coleslaw? I like adding it.
    Oh, and you keep making me want to get a salad spinner!

    My wife an I had our parents over for our 1 year anniversary. I smoked a pork butt for 14 hours and made the Street Corn Salad with fresh sweet corn. We followed the recipe 100% and it was perfect. 100% new favorite side for bbq or tacos. Thank Brian. We love your channel, keep up the great content.

    You do such a good job adding details with great brevity, Your videos are well lit, have even sound, and are fun to watch. Most of all, you are relatable and fun. While there are many cooking shows with great production value and celebrities, none of them are better, they are just different. You are definitely at the top most level, with your own style. You really do a great job with this.

    Non Pro tip. I'm doing 2 of these. the white part of the spring onions from the corn recipe can replace the onion at 0:49 for the beans.
    My plank ribs have about 3 hours to go, so I'm checking out sides. Beans and corn grabbed my attention. Will make the cabbage for the leftovers on a bun.
    Going to add 2 ancho's I dried in place of the jalapenos. Kid friendly and all that.

    I also found that soaking the sliced onion in a light saltwater bath for 10 or so minutes while you prep the rest of your veg, then rising afterward really helps!! I use this trick for all my pasta salads as well.

    Awesome video Brian. A few interesting additions, try using a few different bean varieties. I use red kidney, great northern, black, & cannellini beans.
    For the slaw, use bread & butter pickle brine, instead of cider vinegar. It really adds a nice pop.

    Made all 3 of these for July 4th meal - we had never made anything like the street corn, and EVERYONE commented on how great it was. Only deviation I made to any of these was to finish the beans in the smoker (apple wood) with strips of bacon on top.

    Love the creamy slaw! Normally I don't care for creamy slaw but I was intrigued by the grainy mustard and fennel bulb. Wow-zers does it go up a notch! It's a keeper.

    Can't wait to try all three. We have a "standard" recipe for beans but the coleslaw and corn salad look tasty...

    Love that corn! I've been making a similar recipe for a while now. I'm going to try yours next.
    Same with the coleslaw ... Some really good tips that I didn't know. Thank you! Mine doesn't last long in the house, but it does end up bathing in the watered down dressing after sitting in the fridge over night

    I made the Cole Slaw and Street Corn for my 4th of July cookout. The Cole Slaw was not hit hard, but everyone took some home. However, the Street Corn was a huge hit. It was almost all eaten. I love trying new recipes. My family has their favorites and it is not easy to bring new dishes. Most took a teaspoon of each and went back and got a full serving of each. I will definitely make the Street Corn again. Thank you for an upgrade on the recipes.

      same experience as I made it or the 4th. i used only 1/4 of the jalapeno pepper.

      @@u235u235u235 I used the whole pepper and had a really fine dice. Probably my best knife cuts ever. You would think mastering knife cuts would be easy...but "no!" 😆

    I made the street corn yesterday as a side for bbq baby back ribs. Swapped the cheese for half feta, half Parmigiano. It was delicious! Creamy with just the right acidity made it a killer! Thanks 😊

    Thanks for the lesson. I have always removed the stems big and small from cilantro. And I use A-LOT of cilantro in salsa.

    What a great idea with the salad spinner! We used to have a rotisserie chicken restaurant that had the most unbelievably delicious coleslaw (and chicken) I've ever had. They put pineapple juice in the dressing.

    The baked bean recipe is exactly how my mother used to make it (but without the chili powder or jalapeño - because she was anti-spice). But as an adult I always added the
    chili powder and jalapeño. A little substitute of honey or agave syrup instead of the sugar is a nice touch. Also, a small amount of ground celery seed in the slaw will add a
    nice flavor in the background. I have had the regular street corn in Mexico and am anxious to try the recipe presented here - thanks for the presentation.

    I made it before and it became a family favorite! I make a few adjustments (no cilantro (I don’t have the soap gene I just don’t like it), using poblanos instead of jalapeños, and use chipotle powder instead of chili powder). Genuinely thank you so much, it has become a family favorite and you’re right it should be a mainstream side dish in American BBQ
