This was delicious! I had a bag of frozen cauliflower, so I used that. I microwaved it first, drained the water from the glass bowl, then I put it in my Cuisinart, adding some butter, dried chives and kosher salt and pepper. I didn't have cream cheese, but truthfully I don't think it needs it. It came out so delicious and not the carbs or calories of potatoes. Thank you!

I’ve made this twice so far. The first time I forgot to add the garlic. The second time I added it in and my wife and I both liked the version without the garlic, which is weird because we love garlic. I’m gonna make it without the garlic from now on though. Thanks!

I've been doing it pretty much the exact same way except i use olive oil instead of butter and i also add caramelized onion along with the roasted garlic. Is so good.

Grass fed Butter is better for you then olive oil unless your ordering olive oil from Italy and it’s the real deal. Most olive oil‘s are not real olive oil or poor quality so they are without the health benefits of good quality olive oil and they typically are rancid by the time you buy them.

You are probably using canola oil ......most "olive oils" are fake.

you understand how highly inflammatory all that is? Which causes cancer. Just cut out the vegan butter and soy cream cheese, add some nutritional yeast and it will still taste great.

I also recommend cold smoking a cauliflower, we use hickory pellets. We also add fried Leek puree them together and then add pan fried diced bacon.. Overnight the flavour develops into WOW Factor.

Thanks for the recipe! Looks delicious! Do you think this would be stable enough to put on top of a casserole and broil with Parmesan cheese? I have a recipe that calls for mashed potato as the top layers.
All other layers are keto friendly, so I’m trying to adapt it.😊

I saw this at a restaurant about 2 weeks ago. I thought it was mashed potatoes but they said it was mashed cauliflower.
I tried to make it before seeing your video and it wasn't creamy as yours. I used the Kitchen Aid stand mixer to mix it up.
I did use salt, pepper, half and half, garlic and chopped fried bacon for flavor.
Thanks for the video. I have downloaded it for further viewing.
A stand mixer doesn't get it as smooth as a food processor, since it doesn't have a sharp blade. It still works, but like you found, it's les creamy that way. Hope you still liked it. Also, since I put so much effort into making these videos (believe it or not, the time to create one is over 12 hours), I appreciate people watching them on CZcams rather than downloading them.

Hi. I would like to share my fix for Mashed Cauli . I take 2 Birdseye Mashed Cauli and microwave them till done. Put them both in a bowl and mix in 2 Herb-Ox Sodium Free chicken bouillon packets, some garlic powder and 1/2 to 3/4 C. Sharp Cheddar Cheese. Top with Keto gravy if you like. Works for me. 👍🏼

Looks good. I'm thinking of substituting cauliflower prepared like this in a stuffed potatoes recipe. Do you think it will work (hold together in patties, with an addition of flour)?
It might work if you add flour (but would no longer be low carb). I haven’t tried it so let me know how it goes if you do!
I made mashed cauliflower tonight, It was soooo good! The texture was like mashed potatoes. I used Philadelphia garden vegetable cream cheese that my husband had in the frig, because I didn't have a plain one thawed. I also used frozen riced cauliflower, and put it in a colander and pressed out the extra liquid after cooking it. Thank you so much for this recipe. I just subscribed to your channel tonight, since this recipe turned out so well. I'll have to go to your channel, and see what else you have to offer. Thanks Again!

You can hand mash this as well. I found out my blender was broken once all the ingredients were in so I dumped everything back in the pot and used my hand masher

I have made these and I didn't like cauliflower. I did double the garlic and I was amazed how good they were. I didn't even use the parmesan cheese.

You can do this in the instant pot then use an immersion blender. Much easier.
I am in search for a mash and I have watched videos by Black Tie Kitchen and Keto Twins, Joe Duff and now this one.
I am intrigued about the roasting cauliflower first idea by the twins but scared about disappointment as people's taste is subjective.
Hi Paula, It doesn't really matter how you cook the cauliflower as long as it's extremely soft. You can roast it if you prefer the roasted flavor.

Hi Carole, Yes, that should work and I've done this before. Just make sure you cook it until it's very soft (basically mushy) before blending.

It do best when you add about too or three handful of flour in this.
Adding wheat flour means it isn't low carb (Keto) and doesn't work for gluten intolerant folk

I find that a food processor makes a smoother texture, but you can try a hand blender if you like.

What do you do with the rest of the cauliflower? I hope you don"t throw it away, you can use everything even the green "leaves", I save it and also the harder bits from broccoli and cale and when I have enough I make a mash of it - delicious. It makes no sense to throw away good nutritious food.
Hi Christina, I don't use the leaves but I usually save the stems for stir fry or casseroles. Feel free to use them however you like, I just don't recommend the stems and leaves for mash.
Have you ever tried roasting the cauliflower? Curious what kind of difference it would make. I heard the longer you cook cauliflower the less it tastes like cauliflower...opinion?
Yes, that’s also delicious. But you’d need to roast it until it’s fall apart soft, softer than you normally would if you were eating the florets. Cooking the cauliflower until it’s very soft is definitely important for the right texture regardless of how you cook it.
I have and it is good but I wouldn't say it tastes less like cauliflower. It just changes the flavor profile a bit and in a good way in my opinion. Roasting veggies always makes them taste better. I don't roast them until they're soft I just get Maillard reaction on the surface and then steam them.

Yes, it reheats well. You can do it in the microwave or the oven.

For those making this recipe, DO NOT steam the cauliflower, it will turn out sandy, boil it instead, the rest of the recipe is fine.
2 Ingredient Cauliflower Recipe: Onions change flavor from raw to translucent & then when you brown them in butter a totally different flavor. Cauliflower is bland, but if you brown it with butter in a frying pan the flavor will completely change & it’s one of the most delicious foods! Make sure it’s very brown! Yummy!

Does anybody know the calorie count on this recipe? The amount of butter and cream cheese she used would add up in calories because foods high in fat are more calorically dense. But since cauliflower is so low in calories, the calories might still be manageable for the portion size.
Don't count calories, reduce or cut out carbs. That's the ticket!

Sure is a lot of picky people on here. She is simply sharing what she does and likes. The rest of us will end up cooking it to please our own individual taste buds anyway. I have CKD so I can't have 'potatoes' (too much phosphorous and potassium) I was looking for an alternative when I stumbled across "Wholesome Yum" - I love cauliflower so I'm definitely going to make this and if I love it, maybe next time I'll roast the florets in the oven. I'm sure there must be other ways to experiment so I don't get tired of it. Thanks so much for your lovely video. 😀
