I fried my first turkey in 1992 as a friend showed me how. Over time I learned several things about this method. The size of the turkey you have is perfect for frying. NO bigger. I also used a couple of pots before I found the ideal pot. I have a stainless pot that is narrow and tall. Yours is a little large. Although the large pot does a great job, it requires too much oil. If you use peanut oil as most people do, it is expensive. It looks like you may have used at least 3 or more gallons of oil. We all know you can strain it and use it several times but with the correct pot, you will use much less oil. With my setup, I can fry a 12 to14 pound turkey with 1.5 gallons of CANOLA oil. With canola oil, the turkey is much lighter and the oil is much cheaper. I get my oil up to 325 and drop the turkey. The temp will drop to 300 and that is where I keep it. This allows me to get the turkey done deep inside and have a really golden brown skin when finished. About 45 minutes into the fry, I pull the turkey up and check the thigh with an instant-read thermometer. By that time it is about 170 inside and I pull the turkey. Tip, after you pull the turkey, leave the fire going and drop a bunch of corn on the cob into the hot oil for ten minutes. Some of the best corn you will ever eat. Chef Jerry

I'm so glad pros like you show how to properly deep fry one of these as this fool must have had his oil at 500 degrees and filled the pot so full of oil the whole thing exploded the minute he put in his Turkey and his whole deck was flaming!!

hey guys try this. Boil your turkey in water and then put it in the oven fr 45 minutes on 400 to brown the skin. Boil it ten minutes per pound. It will be the juiciest turkey you ever ate.
