- I did a Smoked Fried Turkey - or Smo Fried Turkey. First I brined a whole turkey, smoked it with pecan wood half the way, and then deep fried it in peanut oil for the last step to get a juicy, smoked turkey with a crispy turkey skin.

Smoked and Fried Turkey Recipe
Ingredients:
- 1 Whole Turkey 12lbs
- 1 bottle Malcom’s Bird Brine bit.ly/H2Qbirdbrine
- 2 gallons Water
- 1 can Vegetable Cooking Spray (or your favorite oil)
- 2 Tablespoons Killer Hogs AP Seasoning bit.ly/TheAPRub
- 2 Tablespoons Malcom’s King Craw Seasoning bit.ly/KingCrawCajun
Directions:
1. Remove thawed turkey from packaging be sure to check the cavity and neck area for giblets.
2. Place the turkey in Meat Bag or large container and pour in the bottle of Bird Brine. Add 2 gallons of water (enough to completely submerge the bird) and place in the refrigerator or in a cooler on ice for 24-48 hours.
3. Remove turkey from brine and allow to drain. Place on a wire rack over a sheet pan and place in the refrigerator for 2 hours to dry the skin. (It helps to pat the excess moisture off the skin with paper towel)
4. Prepare pellet grill for indirect smoking at 275°F using pecan pellets.
5. Spray the skin with the cooking spray - or another oil - and season with AP seasoning on all sides.
6. Place the turkey in the smoker breast side up until an internal meat probe hits about 150° F.
7. Set up a turkey fryer for deep frying at 350°F using peanut oil for best flavor. Any clear frying oil will work.
8. Remove the turkey from the smoker and insert the turkey frying rod/hanger through the cavity. 9. Leave the meat probe inserted in the thickest part of the breast to monitor internal temperature while frying.
10. Carefully lower the turkey breast side down into the hot oil. Use extreme caution and follow the turkey fryer directions carefully.
11. When the internal temperature reaches 165°F in the breast, carefully remove the turkey from the hot oil allowing it to drain. Place the turkey immediately on a cutting board breast side up and remove the turkey frying rod/hanger.
12. Season the outer skin with King Craw Cajun Seasoning and let the bird rest for 5-10 minutes before carving.

The Battle for the Soul of Thanksgiving (Smoked vs Deep-Fried) has just reached its only logical armistice...
As a northerner, I feel I missed out big time 😢 we only baked ours….
There are people as we speak... waiting on turkey friers from amazon..
@@OnePieceZoro36 to burn down they house because they didn't listen to Malcolm.
@@It-b-Blair
I live in NY and there’s been several house/
yard fires in my county that fire departments
had to fight because amateurs tried to
deep fry their Thanksgiving turkey. There
must be some success stories for every
epic failure, so some northerners definitely
do it- it’s just unconventional here
@@It-b-Blair all you need is a fryer and peanut oil. Creole butter injection helps too
This guy has BEEN that dude for a long time when it comes to BBQ
A smoked, deep fried turkey video to start November solidifies why Malcom is that dude! His own ab libs during the cooking is hilarious too! 😂😂
Malcom--great job as always! Still laughing, though..."Whew--safety Croc ain't working!" 😂
The Bird is the word! Bird Bird Bird Bird is the Word!
This man could make a plunger look appetizing
😂
This right here is some next level turkey. Never thought to smoke it and then fry it. I think this is a game changer.
Popeyes doesn’t stand a CHANCE! Malcom is the man
"Popeye's aint got nothing on me y'all!" is my quote of the year. And you are right. Love your food. Love your style. Love your channel.
I am dong his smoked Turkey from last year right now. He has gone to the next level with this.
Thank you, Malcom! Last week when I saw this video I knew I had to try it for my work's potluck today. I've smoked turkeys in the past but have never deep fried them. I made two smok-a-fried turkeys today for the potluck and everyone absolutely loved them. Thanks for the inspiration and keep cookin'!
That time of year again the turkey Malcolm makes is the turkey we make
Im not sure if you think this or not, but you a funny guy. I sit here, drink my beers, and watch your videos. Love your videos and trying your recipes. ...
“Safety crocs ain’t workin’!” OMG!!! The funniest thing on CZcams this year. That’s was classic. Malcolm…you need to come to the SF Bay Area (Fremont, CA) for an in person demo. You rawk! Continued good health and success.
I had issues with my fryer burner this thanksgiving with 2 turkeys to cook. Put the first one in and the oil temp was not recovering. With time running out with family on the way, I fired up my pit and thru the first bird in it to finish. Dropped the second bird in the fryer to get it going. Ended up frying both birds to half way done and finished off in the pit. They came out AWESOME!!! Family said that was my best ones yet. I highly recommend this procedure.
Malcom final boss of turkey cooks 😂
Let me tell you something Malcolm, I have been watching your videos for a long time now. You have such great recipes and we all know your food tastes good, you can't trust a skinny cook. This video is so great that I tried it yesterday and you know what? My kids didn't like the taste of just plain cooked turkey but when I gave them this, they asked for seconds and wanted more a few hours later. Thank you for your videos and the awesome camera work from the wife. Thank you again
smoking a turkey for my gf family for the first time. just watched your 9 year old video and now gonna watch this. should have known you would be on it!
Malcolm you are legend.. I bet those turkeys are just lining up to be on your show.
Deeeeeelicious
I tried this turkey last Sunday. And my family loved. They have brought turkeys for thanksgiving
Malcolm, buddy... That looks outstanding! I've got a 19 lb bird that I'm going to do on Thanksgiving. I don't have a Treager, so I'm going to try and do it on my offset stick burner, and then drop that baby in the oil. I can't wait!!
Did this last year by accident (had a grease fire and had to get the turkey out FAST.) We had the fryer going for the other turkeys and so we just finished mine off in it and it came out incredible. Everyone loved it.
Ain't no one right way of doin it! This ones another one for the back pocket come turkey day!!!!!!!
watching these videos at work is my window to paradise.
Malcom = Legend.
OMG 😳 I legit JUST typed in the yt search engine 3 days ago: "smoked and fried meats" and of ALL ppl I get to watch one of my fave CZcamsrs shed light on this for me!!! 🙌🏽 You don't even know how geeked I am! Tfs!!!
*Pulls out pen and pad
Legend says that there are supposed to be blooper reels.... but he never messes up...
That is cooler than anything that has ever been cool before.
"Turkey hanging apparatus" haha I love it
Malcom RULES!
I call it Smo-Fried!!! After doing this several years ago for the fam, this is the only way we have turkey.
Looks amazing! Love what you do
Now that's how you do a turkey!
Malcom, you take BBQ to the limit! I've done the brine and the smoke but never have I thought about a deep fry as a finish . I can't stop thinking about this. I'm going to have to try it. I just don't think my wife will trust me with a turkey, I might try a chicken first. Thank you Malcom , you're the man!
I did a couple chickens on the smoker two weeks ago for practice. My wife picked up a Turkey for me to smoke this Sunday to perfect. Now he adds a deep fryer to finish the turkey off and I am back and square one.
@@garywilliams7484 Lol, I know what you mean! The deep fry finish for such a short time and the extra amount of work to achieve that perfection has my brain in a knot. I guess I'm going to drink more beer till I can convince myself that level of BBQ perfection comes with a price.
@@Robalo-2660 I am struggling to justify the added cost just to make the skin a little more crispy. I can add a couple of logs to bump up the heat in my smoker for the last hour and get great skin.
@@garywilliams7484 Your right, that is a lot of cost to just get a crispy skin. But like Malcom said, you can reuse that oil. I typically fry a couple of turkeys for family and friends and then I use the oil for the last time on Rivalry Saturday to deep fry Buffalo chickens and have a watch party for all the great college games that day. So I use that oil on at least 3-4 turkeys and a couple of chickens, getting my moneys worth out the oil. And something about a smo-fried turkey sets it apart from a plain ol' smoked turkey.
That looks awesome Malcom! - Cheers!
I love this channel great job !
I always deep fry my turkey for the holidays and it comes out beautiful! This is another way to get even more flavor into that dude, so I'm trying it!
I bow to you sir, what an amazing idea! To top it off, I had no idea you could use the probe in the hot oil!!! THANK YOU!
I always enjoy Malcoms' videos - yummy!
Another great video from a great channel.
I did this as a last result last year. The smoked turkey wasn’t ready my fire just went out on the smoker and everyone was showing up. I panicked and pulled out the electric fryer. Got it up to temp and dropped it. Everyone loved it!
Woah it looks really good!
This is quite literally the best turkey I have ever tasted. Made a trial run version before Thanksgiving and it was the tastiest turkey anyone at dinner had ever had.
The BBQ man of youtube facts!

You gotta be one of the best neighbor on Earth, absolutely delicious looking food 😋 thank you 😊

Best time of the year, Malcom’s making a turkey!
I do this all the time, only difference is I use the Big easy oil less turkey fryer. Wonderful! it also allows me to shoot it up with marinade!
Great video, best turkey brine I have ever used. I made a turkey at a company bbq event, everyone was raving about the flavor, thank you Malcom.
OMG!!!! I’m SHOOK right now!!! 😱😱😱😱 THANK YOU!!!! ❤

Bro you just keep kicking it up, I’m dying 😂😂
I’m inspired by your old Smoked Turkey video. Looking to give it a go this year!

Did one of these last month for a friend’s party. Fantastic way to do a bird.
Also, good call on seasoning after pulling from the oil! Need to remember that trick.
Dad gum it I love Malcom’s recipes….happy thanksgiving big dawg
I love Turkey on Thanksgiving in the USA and also at Christmas in the UK. It looked amazing Malcolm!!!!
Malcom this is an awesome video! My plan is to brine, smoked, and deep fry a turkey breast this years. I may add some turkey legs as well but I don't want to do a whole turkey. Thank you for the great videos you always post!
A national treasure, Malcom Reed.
Man that looks awesome
Today finally bought some seasoning of yours that my Walmart finally placed on their shelves. after watching you for years. Your AP seasoning and your BBQ rub. Excellent taste. 5☆s!
