- Felt like the whole world was making pasta alla vodka after Gigi Hadid shared her version and it truly does not disappoint đ€đœ here's my take on it:
Spicy (Harissa) Pasta alla Vodka
// INGREDIENTS //
- 5 cloves garlic, minced
- 1 onion, chopped
- Red chili flakes, to taste
- Oregano, to taste
- Freshly cracked black pepper, to taste
- Salt, to taste
- 1 tsp harissa paste (+/-)
- 1 tube of tomato paste
- Splash of vodka
- 1 cup heavy cream
- 1 lb pasta
- Knob of butter
- 1/3 cup parmigiano-reggiano, grated
- Splash of reserved starchy pasta water (+/- based on desired consistency)
- Basil, chiffonade
// RECIPE //
1ïžâŁ Start boiling a pot with water for the pasta. In another pan, add lots of evoo to a pan and then add garlic and onion. If you grinded them like I did here, sautĂ© until fragrant just a minute or so. If you did bigger chops of onion, cook for 2-3 min.
2ïžâŁ Add red chili flakes, oregano, salt, and pepper. Toast for 30 seconds.
3ïžâŁ At this point (depending on the type of pasta you're using), you can start (heavily) salting your boiling water and add your pasta. Cook about 2 minutes less than the instructions say so that the pasta can finish in the sauce and still be al dente.
4ïžâŁ Add harissa and tomato paste. Cook down for 4-5 min until tomato paste is caramelized (it'll turn from a bright red to a deep dull red)
5ïžâŁ Add a splash of vodka, and then cook it all off on medium-high heat.
6ïžâŁ On low heat, add in heavy cream and start mixing well until you get a deep orange color.
7ïžâŁ Your pasta should be done at about this point so add it in (and be sure to save some pasta water!! this is essential)
8ïžâŁ Add in the pasta water, butter, and parmigiano-reggiano. Mix well and add more pasta water as needed while mixing to get the consistency you want. Top with basil!
For the garlic bread: I roasted two heads of garlic drizzled in olive oil for an hour at 400F and mixed it with softened butter and spices! You can wrap the garlic in some foil too.

@@yourspritzels itâs a chilli paste that originates from Tunisia,well known and loved by North Africans. Itâs not only hot but itâs tasty and savoury if that makes sense(it has spices added to it).
You can add it on food as a sauce or use it in ur cooking just like in the video.

I loooove making this recipe and my boyfriend asks for it regularly. I personally sub the tomato paste with the Raoâs Arrabbiata (spicy marinara), about 3/4 to 1 cup, and I also never have vodka so I skip that. Itâs soooo yummy, add some chicken in there and đđ€đ» and the rigatoni is so perfect for scooping up that delicious sauce đ€€ this is literally my fav meal đ

its extremely common, in fact preferred, to pre mince your garlic and mix it with minced ginger to form a paste for indian food. we freeze it in ice trays for longevity.

@@rootedinspice no love I meant for this you can just boil/bake tomato and blend it.... Or you can use raw tomato and blend it...the cooking of tomato can be done in a pan ad only one tomato is needed it will only take hardly 2 minutes.
@@faith3003 Ah so tomato paste is very diff from tomato puree! I do that method when Iâm making a pomodoro kind of pasta sauce but not for pasta alla vodka. You totally can but itâll be a different taste, consistency, and color!
