豬扒 3 片
洋蔥 1 個
麵粉/生粉 適量
鹽 適量
黑胡椒 適量
牛油 適量
🟢預調醬汁:茄汁 2 湯匙,糖 1 湯匙,水 3 湯匙拌勻
🟢做法:
1️⃣ 豬扒洗淨並吸乾水份,用刀背啄鬆並把周邊白色筋膜分幾段切開。
2️⃣ 用鹽和黑胡椒調味(有時間可醃 2-3 小時),在豬扒上撒上少許麵粉或生粉,每面煎至金黃色,下適量鹽和黑胡椒調味。
3️⃣ 取出豬扒,在鍋中加入洋蔥,炒至微黃,加入少許鹽和牛油,再加入預調醬汁煮成汁,將豬扒放在碟中,淋上醬汁,即可享用。
🟢 Ingredients:
Pork chops - 3 pieces
Onion - 1
Flour/cornstarch - as needed
Salt - as needed
Black pepper - as needed
Butter - as needed
🟢 Pre-made sauce: Ketchup - 2 tablespoons, Sugar - 1 tablespoon, Water - 3 tablespoons, mixed well.
🟢Cooking directions:
1️⃣ Rinse the pork chop and pat it dry. Use the back of a knife to tenderize it and cut the white membrane around the edges into several sections.
2️⃣ Season the pork chops with salt and black pepper (marinating for 2-3 hours is recommended but optional) and sprinkle a little flour or cornstarch on each side. Fry each side until golden brown, seasoning with salt and black pepper as needed.
3️⃣ Remove the pork chops from the pan and add the onion. Fry until slightly golden, then add a pinch of salt and some butter. Add the pre-mixed sauce to the pan to make a sauce. Serve the pork chops on a plate, drizzled with the sauce.

想請教一下,靚的厚豬扒只靠兩面煎好難剛剛熟,一係中間唔熟一係過熟變乾了,如果厚豬扒約1.5cm 會各煎幾多分鐘?先大火後中細火?謝謝🙏
豬扒一般煎4分鐘左右熟透, 我自己的做法先大火煎一分鐘, 然後看它的狀態而決定轉中火或中小火煎多一分鐘, 反轉再大火煎另一面, 但豬扒不同牛扒,豬扒一定要熟透, 如果您煎完4分鐘還未熟透當然再煎多一陣, 火力的控制全憑經驗因應當時豬扒的狀況而決定, 比如說火很大煎了30秒就焦香了, 當然不能堅持用這個火力煎下去.謝謝收看!

1)煎豬扒用大火煎, 一般厚度大約4分鐘熟透, 厚些要加時間, 當您的豬扒要煎4分,原則上每邊煎2分鐘, 但您能保證您大火煎2分鐘不會燶? 所以當那件豬扒落鑊您就要控制火候, 您見到煎到1分鐘時已經有點焦黃, 那就要轉細一點火, 煮甚麼菜也好, 一落鑊您就要控制火力, 不要讓火力控制您.
2)轉中火還轉小火要看當時豬扒的狀況, 如果轉中火豬扒會燶就轉小火, 冚蓋幾多分鐘 要看您豬扒生熟情況, 一般一分鐘都可以了, 如果豬扒煎完4分鐘已經熟了就不用冚蓋. 煮餸落鑊後要控制力火, 亦要隨食物的狀態而執生., 謝謝收看!

煎之前撒少許生粉或麵粉, 煎起來表面會香脆一點, 同時也會給豬扒封鎖肉汁, 吃起來不會柴皮, 您不想放那就不放, 謝謝收看🌹

You need to add vinegar or better yet black vinegar. This dish is basically like pork chops with ketchup sauce...lol
