- Oh what a joy to bring out the coal pot again. Term test was finished and the girls felt like winding down. Being outdoors was the perfect way for the girls to refocus and be grounded again. While they do enjoy school, there's a limit to how much, heat and traffic they can take. The cool dry season winds kept us company for the entire evening, keeping our coal pot burning and our minds clear. This was such a simple meal to prepare. In fact, most meals are simple, all that's required is a little planning and prep, after that, the sky is the limit. Enjoy.

No don't blend the potatoes, it would become gummy because the gluten would get overworked in the blender. Best way is a ricer if you have one. Otherwise mash with a potato masher, use hot milk and butter, add seasoning and cheese if desired. Best mashed potatoes ever.
Use a hand mixer it will never become gummy
We call that fish basa or swai sometimes it tastes already salty depending on where it's from it can be dry or it could be really silky after it Cooks it normally doesn't have a fish smell

The butterfish and bangamary fish are both popular in Guyana, I presume they are importing it from there. This butterfish is elongated, the pompano is rounded, 2 different varieties of fish.

After frying I’ve tried adding it to stew and curry sauces both they’ve always broken up once in the sauce. You might have better luck than me though.
It was lovely to see everyone having a wonderful time. It was a beautiful day for cooking outdoors. Here's a little tip for cream or mashed potatoes, be careful of blending because it can very easily turn into wallpaper paste. Your best gadget will be a potato ricer or a handmixer that aerates the potatoes, and you can control the amount of liquid you add to get a light fluffy mash. Loved seeing everyone, even Chambers and the kitty. Take care and be safe.

Ellis girl, I usually love all your food, but the person who suggested blending mashed potatoes did you dirty.. those potatoes weren't mashed, they were obliterated 😅 absolutely nothing wrong with some lumps in your mashed potatoes but if you want them creamy and smooth, try passing them through a sieve or there's a utensil called a 'ricer' you'll get a much better result than that atrocity.
