Getting Creative with Winter Squash - Fermented Butternut Squash Chutney

  • End of the season squash... Perfect for trying funky new ferments! Not a staple on the same level as sauerkraut but definitely a fun and unique condiment. I'm honestly not sure if this is a chutney or a relish or... But it is, whatever it is! I used the terms squash and pumpkin interchangeably here, forgive me, I know there are technical differences... but potato patato, you know what I am talking about and you can do this with any winter squash you want!
    Have you ever fermented squash before? A pumpkin hot sauce sounds like fun to me, that will be on my experiment list this fall when I have fresh squash and peppers on hand!

    I love fermented foods and do a.lot of things. Radishes, carrots, garlic, celery, lemon rinds, etc nut for some reason never thought of squash. Guess what is in the wine cellar? Two butternut squash! Ferementing tomorrow!

    Funny, I was just looking at the half dozen butternut squash I have left in the basement. It might still be a little cool to try because I don't heat past 69, but warmer days will be here in a month or so. It would be interesting to try 😉

      You can! I've got another couple I'm thinking of doing with peppers and making something a little spicy 🤔 they pickle/ferment nicely!

      Absolutely! You can skip the curry too and do other spices you enjoy, it's just an idea of something different to try with squash! You can't skip the salt tho.

    I am currently curing my first piece of pork belly I noticed after I let it stay in the ice box for 10 days on the metal trays and There are some green mold spots where the meat touched the metal tray is this okay or should I discard this piece of meat I'm currently have hung it up and I'm letting it dry😊

      Should be totally fine. You could take a cloth dipped in wine or vinegar and wipe any moldy spots off, that should nip it in the bud and discourage more growth, but green and white are the most common mold colors and they usually are not alarming, think blue cheese type molds! Some people like to wipe it away and some leave it by and say it adds to the flavor.
