So, if you don't want to rely on the supermarket egg supply or forego eggs in the colder months when your chickens are not laying much, you need to learn these 3 old fashioned preservation methods for farm fresh eggs! Water glassing (or limed eggs), oiled or buttered eggs, and even pickled eggs! Between these three methods, you won't need to give away all your spring abundance of eggs, you can preserve them for the winter instead!

I love it when one of videos come up and I refresh things to learn! On our backyard journey ~we have 14 old hens and are raising 9 new babies. So our 3 to 7 eggs a day will increase. Yes, precisely, you can pickle a store bought egg but the water glassing and oiling can not be done to store bought eggs. Only freshly laid, clean, un washed eggs. It is because of the protective coating chickens lay on the egg called "bloom" it is antibacterial and helps to keep the egg fresh, without it the porous eggs are compromised and need to be refridgerated and used fairly quickly.
For pickling eggs, I have made them and really love them! However I often have cracked un perfectly peeled eggs. Is this safe to use ? I read the eggs had to be peeled perfectly no cracks.. thank you!
I went over this in my pickling eggs video, I'll link it if you're interested. If the yolk is exposed, it's probably not safe, but otherwise, it's probably fine. My dad and I can them with small surface wounds, just not if the yolk is exposed.

Is the lime you find near the concrete in HD Lowe or any other construction store the same?
No they aren't quite the same. You want to use Cal Lime (calcium hydroxide) aka pickling lime, but it is not the same as hydrated lime that is used for water treatment and construction projects.

What can you do if you didn’t have access to fresh eggs
You can use store bought eggs to make pickled eggs, but the other two methods require fresh unwashed eggs. You can also freeze raw eggs, but that isn't my favorite method personally, I don't have a tun of freezer space!
How about petroleum jelly?
If it is food grade, you could give it a shot. I personally wouldn't because I would not consider any petroleum jelly "food" lol but that's just me. Whatever you use will end up being in the eggs (the shells are porous) so as long as it's something you are comfortable eating, it would be worth a try. I have personally done tallow, lard, coconut oil, and butter.
Why can't you wash the eggs before putting oil on them?
Washing removes the protective "bloom" on an egg and allows bacteria to enter thru the porous shell. That is why very clean and unwashed eggs are needed.

I am completely confused with this video. There's no information at all about what these eggs are good for with the various storage methods. All it tells me is that these methods are available. It's kind of useless in the format given.
Water glassed and oiled can be used for anything you would use fresh eggs for. Scrambled eggs, in baking... after some time, they can become fragile, where the yolk will break when cracked but still great for many uses! The only thing it isn't great for is meringue based dishes as far as I know.
Pickled eggs are already hard boiled, as mentioned, and make a great snack!
