it seems to me like the white one sounds very different from the gray one!
from the video as far i could tell, the only difference is that the gray one was using the gasket mount while the white one was using the bowl mount
the switches also appear to be different - are they both obsidian switches?

i think gasket mount create slightly thicker sound to the keyboard, the bowl mount sounds a little thin to me
