Thick Chicken Curry / Ayam Kuzi Resepi Chef Wan

  • INGREDIENTS 1 - mix all and marinate for 20 mins
    800g chicken
    1 tbsp ginger
    5 cloves of garlic
    0.5 tsp salt
    1 tsp turmeric powder
    INGREDIENTS 2 - blend and keep aside
    2 inch ginger
    5 cloves of garlic
    6-8 shallots
    0.5 cup of water
    INGREDIENTS 3 - blend and keep aside
    3-4 green chilies
    1 handful of coriander leaves
    0.5 cup of water
    INGREDIENTS 4 - Fry using 1.15 cup of oil and keep aside all individually
    8-10 Shallots - sliced
    1 medium size onion - chopped
    1 cup of raisins, fry till become balloon
    1.5 cup of almonds, preferably slices or can be whole one too
    chicken that marinated (INGREDIENTS 1), fry half done
    OTHER INGREDIENTS
    0.5 cup oil
    2 pandan leaves
    2 lemongrass
    2 tbsp briyani masala
    3 tbsp of chili blended
    0.5 cup of water
    1 cup of evaporated creamer
    3 tbsp tomato puree
    salt
    2 tbsp yoghurt / lemon juice
    chopped coriander
    Method
    1. Add oil in pan.
    2. Sauté Ingredients {2}
    3. Throw in lemongrass and pandan leaves
    4. Add in Ingredients {3} and sauté till oil separate
    5. Add in briyani masala and chili blended with water. Cook till oil separates
    6. Put in the fried chicken, evaporated creamer, tomato puree, raisins, shallots, fried almonds, fried onions and salt. Mix well and cook till well done.
    7. Add in yoghurt or lemon juice 2 minutes before you off the flame. Garnish with chopped coriander.
