A pie that's literally all crust

**RECIPE**
1 stick (113g) cold butter
1/2 stick (106g) melted butter
1 3/4 cup (210g) flour
about 16 Oreo cookies (200g)
2 packages (250) graham crackers
1 tablespoon (15g) sugar for the pie crust
1/2 cup (100g) sugar for the binder
1/2 cup (150g) dark corn syrup (or golden syrup, or honey)
2 eggs
cold water
vanilla
salt
whipped cream for garnish
Cut the cold butter into the flour, tablespoon of sugar and a pinch of salt until the butter almost disappears. Stir in just enough cold water to make everything come together into a shaggy dough. Chill and rest for about a half hour to let the particles hydrate.
Mix up the binder by stirring the corn syrup, half cup sugar, eggs and a splash of vanilla until smooth. This tends to separate as it sits, so remember to mix it again right before you pour it out later.
Melt the half stick of butter and use a little of it to lightly grease the inside of your pie pan. Crush the Oreos into crumbs and mix with about a third of the melted butter. Crush the graham crackers and mix with all of the remaining butter (and a pinch of salt, if the butter is unsalted).
Get the oven heating to 350ºF/180ºC.
Flour your counter and roll the pastry dough out until it's wide enough to cover your pie pan. (Rolling a little, rotating the dough, rolling a little again is a very safe way to roll out cold, crumbly pastry.) Lay the dough in the pan, pinch off any excess around the edges and make sure to patch any holes - you don't want the binder seeping through to the pan surface.
Pour a thin layer of the binder into the pastry crust. Dump in the Oreo crumbs, pat them flat, then pour in another layer of the binder. Dump in the graham cracker crumbs, pat flat and pour on the rest of the binder.
Cover with foil and bake for about 45 minutes. Take the foil off and bake some more until everything is brown and the center isn't jiggly anymore. Cool until the pie is solid enough to turn out. Slice and garnish with whipped cream.

Finally got a chance to try making this abomination and it’s SO good. The Oreo crust in the middle absorbed a lot of the pecan pie filling so it stayed pretty soft, it reminded me of thick brownie batter. I’ll totally make this again, once I’m done serving my time for unleashing this crime into my household

While i personally love the filling of apple pie above all else, i fully support crust lovers. (Granted the quality of the fruit used for pie fillings is like 99% of the quality of the filling)
As adam shows nothing is stopping you from making a crust only pie, and 1 thing you can do is just cookie cutter piecrust and bake the "cookies" and then sprinkle with whatever toppings you choose. (Personally I'm team cinnamon and sugar)

Now I'm imagining all the possibilities. Shortbread crust and chocolate chip cookie crust? Or what about a double crust, where you could place a pie crust at the bottom, a shortbread crust in the middle, then a lattice pie crust on top? I had some strange dessert about 5 years ago at a "fancy" restaurant that was like a shortbread pie or something odd where it was like a pie with shortbread as the filling. I still think about that dessert, and I have no idea what it was or how to make it. It haunts me.

@@casuallatecomer7597 It was years ago and I just improvised a recipe, but it had a cornbread crumb crust and I topped with taco meat, shredded lettuce and diced tomatoes. The cheesecake part was probably a new york style cheesecake recipe (halved I think, to keep it small) without the sugar.

I have made this recipe however I do recommend topping with a spoonful of crust along with a garnish of the finest crust. On the side I would have a cup of the finest aged crust.
In my family, we like to serve it with a on a bed of smoked crust, with extra crust on the side for garnish. I might try it your way when I make it again in the future though (sounds delicious)

Yesss the crust/pastry/bready-bit is the best part of every dessert. Apple crumble, the bottom bit of cheesecake, deep fried icecream -- actually any dough or cookie in ice cream is the best part.
Depends, in apple pie its the filling, in a fruit crisp (apple, wild raspberry, cherry, ect) the cinnamon & oatmeal topping is just as good as the filling. (Although the structure of a crisp makes such terms a little less meaningful)

I think the only pie I’ve ever had where I prefer the filling (and topping, to a lesser extent) is my mom’s pecan pie. I could eat that stuff all day long. It’s also how I imagine ambrosia would taste 😝

As soon as you started your opening remarks I started revising: "ooh, I'd replace the oreos with crushed pecans and use pecan pie filling instead of -" and then you got there.
Golden syrup or ribbon cane syrup for me, and yes to pecans instead of oreos, but I may be adding this to the Thanksgiving menu.

It reminds me of a shoefly pie which isn't quite a pie or a cake. It is also made with crumbs in a pie shell over which you pour a molasses mixture.
I laughed SOO hard.... mostly because I want to make it...
I've always adored how sometimes your measurements are just like "oh I dunno it looks like about this much maybe."
I feel like it realy encourages the idea that cooking really isn't an exact science and it doesn't have to be scary.
For people who think it's so hard that they have to be super precise to not mess it up.

I love that most of Adam's recipes are related to a recent stream of research--or contain some amazing lifesaving tip on cooking.
And then there are the videos that boil down to "Adam like," and I find them rising to become my favorites. I don't think there is any historical/scientific foundation for this, just that Adam like crust. Excited to make this!!!

With any regular pie I have to have at least 4oz of milk to chase it down. I don't think any beverage could combat the total lack of moisture in this pie.
