    Ilish biriyani, also known as Hilsa biriyani, is a delicacy from Bengal that combines the rich, flavorful taste of the Hilsa fish (Ilish) with the aromatic and spiced nature of biriyani. Here’s a basic recipe to prepare Ilish biriyani:
    Ingredients:
    *For the fish marinade:*
    - 500 grams Hilsa fish pieces
    - 1 teaspoon turmeric powder
    - 1 teaspoon red chili powder
    - Salt to taste
    - 2 tablespoons mustard oil
    *For the rice:*
    - 2 cups Basmati rice
    - 4 cups water
    - 1 bay leaf
    - 4-5 cloves
    - 2-3 cardamom pods
    - 1-inch cinnamon stick
    - Salt to taste
    *For the biriyani:*
    - 2 large onions, thinly sliced
    - 2-3 green chilies,

    - 1 tablespoon ginger-garlic paste
    - 1 cup thick yogurt
    - 1 teaspoon turmeric powder
    - 1 teaspoon red chili powder
    - 1 teaspoon garam masala powder
    - 1/2 teaspoon cumin powder
    - 1/2 teaspoon coriander powder
    - 1/4 cup fresh coriander leaves, chopped
    - 1/4 cup fresh mint leaves, chopped
    - Saffron strands soaked in 1/4 cup warm milk
    - 1/4 cup ghee or clarified butter
    - Salt to taste
    Instructions:
    1. *Marinate the Fish:*
    - Clean the Hilsa fish pieces and marinate them with turmeric, red chili powder, salt, and mustard oil. Set aside for at least 30 minutes.
    2. *Cook the Rice:*
    - Rinse the Basmati rice under cold water until the water runs clear.
    - In a large pot, bring water to a boil with bay leaf, cloves, cardamom, cinnamon, and salt.
    - Add the rice and cook until it is 70% done. The grains should still be firm. Drain the rice and set aside.
    3. *Prepare the Biriyani Base:*
    - Heat ghee in a large, heavy-bottomed pan or biriyani pot.
    - Fry the marinated fish pieces lightly on both sides and set aside.
    - In the same pan, add sliced onions and fry until golden brown. Reserve a few for garnishing.
    - Add the green chilies and ginger-garlic paste, and sauté until the raw smell disappears.
    - Add the yogurt, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Cook until the oil starts to separate from the masala.
    - Add chopped coriander and mint leaves, and mix well.
    4. *Layer the Biriyani:*
    - In the biriyani pot, start with a layer of the masala mixture.
    - Add a layer of partially cooked rice.
    - Place the fried fish pieces on top of the rice layer.
    - Repeat with another layer of the masala mixture, rice, and fish.
    - Drizzle the saffron milk and ghee over the top layer.
    - Sprinkle the reserved fried onions for garnish.
    5. *Dum Cooking:*
    - Cover the pot with a tight-fitting lid. You can seal the edges with dough to ensure no steam escapes.
    - Cook on low heat for about 20-25 minutes to let the flavors meld together and the rice finish cooking.
    - Alternatively, you can place the sealed pot in a preheated oven at 180°C (350°F) for the same duration.
    6. *Serve:*
    - Once done, gently fluff the rice with a fork, ensuring not to break the fish pieces.
    - Serve hot with a side of raita or salad.
