True pros don't need to break anything on the tail after you first break them in half. Just the pinch and a nice soaking with the suction of your mouth. It can be done with one hand if you are skilled. In fact, crawfish was my go to snack while driving.

Our mud bugs are a little bigger and have meat in the claws and to cook them correctly we steam them with seaweed. (Maine)

Some advice from a Louisiana Cajun. Put all the seasoning in bring to a boil put the onions and fixings in the basket and then add the crawfish in the basket then lower the basket into the boil with the crawfish already loaded in there.
We also use laundry bags at the bottom of the basket under crawfish with all the potatoes etc.
but whatever you do add the crawfish to the basket while basket is outside the boil. Then you lower basket with crawfish into boiling water. You can throw fixings on after if you want but you don’t pour the crawfish into the basket while the basket is already in the boil lol that defeats half the purpose of the basket. Lol

Syd and Mike, never take a mudbug out of water until it is ready to either freeze for fish bait or ready to go straight to the boiler. Don't order from out of state, mudbugs (crayfish) are plentiful here in Cali. In NorCal, I can catch them all day long in the creeks with just a stick, twine and a very cheap package of fatty store bought bacon. When half your mudbugs are dead, it effects the taste of all the others that are still kicking a bit. Just some nobody advice.
No where down here to catch them and really only had a few that didn’t make it .
