Their skin colour depends on the variety not how ripe it is until its well and truly overripe at which time the sugars turn the skin yellow but the fruit becomes soft. On most of the newer sweeter varieties, the segments can't be pulled apart until the whole fruit is pretty over ripe. As always you can't believe all you hear.

Well for me the pineapples has different tastes base on the colors. Green Pineapples (without any yellow or orange part of it) is perfect to eat for they are freshly sweet, tender and a little bit sour and factories here in Philippines harvests pineapples when they became maturely Green and process them for juices and fruit cocktails. Because if the bottom has a shade of Orange or yellow it is considered as over ripe. When a pineapple is fully orange/yellowish color is not that fresh to eat. It is sweet but it is not tender anymore. 😉 Colors still differs the taste. Coming from the province who grows pineapples and manufacture them for export and for the local market.
