Smoked Bologna - Smo-Fried Twist on a Childhood Classic

- Smoked Bologna is a delicious and cheap sandwich which takes me back to my childhood. My Granny in Alabama made me fried bologna sandwiches. She cut slits in the bologna and fried it in a skillet and simply served it with mayo on white bread.
Fast forward to present day and I choose to add a smoked element to it and pay tribute to all the cooking she taught me. The end result is a smo-fried bologna sandwich that is awesome! I've made this recipe with cheap bologna and all the way up to very expensive bologna. To be honest, I like the $8 chub from a local grocery store the best. The leftovers will save for a while and my family usually eats on it all week. We hope you enjoy it as much as we do!

Pro Tip: Run your boning knife through a bed of yellow mustard (blade edge) and slice...this way you can easily see your cut marks as you go if your're OCD as hell like myself lol
"Slicing Bologna against the grain since 2014." I'd wear that Tshirt.
I worked with a guy back early in my firefighter career, that when we worked together would go to the local meat counter at the market and have them cut us bologna slices as thick as they could somewhere from 3/8 to 1/2 inch then take them back season them and put them on the grill. Once done add some sliced pepper jack cheese bbq sauce then make the bologna burger. Lettuce tomato onion and chow down. Thanks for the video brought back great memories.
damm sounds fire...get it fire lol ty for your service fireman
The guy who hired me 17 years ago was already doing fine but now he's in the corporate part of our parent company. Still swears by a bologna sandwich. One time said "I'm going to get my wife to cook me a bologna steak, cut extra thick, because itbwas a good month."
Ex Waxahachie firefighter here. 👍🏼
Gonna try and find a whole bologna and give that a go, looks awesome. We had an old grocery that always had bologna in huge logs, like 10 lb size, my mother would have the owner slice up a pound and the old guy would always cut an extra slice off for me to eat in the store. The store is long gone and I rarely buy bologna as it is hard to find a decent one out here in Washington state but you have stoked fond memories and I'm now on a mission! Thanks again.
You saved your Grand dad’s cast iron! Doesn’t matter what the world thinks of you. You did the right thing. Bless you. Great looking sandwich. I know how wonderful it tastes.
Hell yeah! I’m a Nashville kid and grew up on fried bologna sandwiches! This is something I’ve put off for far too long! Thanks for the reminder of what we grew up eating! Great video!
Okay let's get one thing perfectly straight.
I was raised in Texas and the south on a farm.
I frigging hate fried bologna. 😂
I was force fed this stuff for way too long.
But yours looks good as usual and hats off to people that like it.
With the price of meat these days I might start to like it again.
Fried bologna, egg, cheese on a toasted hamburger bun was my go-to growing up.
Fried, American cheese and 2 slices of bread. I'm gold.
My grandma made me fried bologna sandwiches for my school lunches lol !!!! Love your channel my friend !!!!
Mom used to make bologna sadwitch fried like a schnitzel, dipped in egg, flour and bread crumbs. One of the best childhood meals I still remember 50 some years ago. Love it.
Just in time for Mother's Day!
Fried bologna was a treat for us growing up in the 70s and 80s in KY.
Fried bologna sandwiches are my comfort food from childhood. I love making this so much.
I smoke a chub of garlic bologna once a month. I love bologna and eat it for my lunch at work all the time
Thanks Matt for bringing tears to my eyes.
I have four or five of those cast iron skillets. Just like that are my late moms. She used to do bologna just like that fry it up cut the ends so it wouldn't make a mess. That's some good eating right there
Hello from South Carolina! Home of boiled peanuts, fried bologna sammiches and the banana sammich! Thick slice Fried bologna, slice of hoop cheese, mustard, white bread and eat up! Make you give back something you never stole!
Enjoyed the video Matt. Sorry for your loss man. Keep on doing what you’re doing! Always enjoy the content.
If you grew up in rural Alabama, in the 60s like I did, bologna sammiches on white bread was what you ate most days for lunch, especially when doing field work. But never as good as this method of dressing the bologna up. Washed down with a quart mason jar of sweet tea wrapped in newspaper and a paper sack to keep it cool.
The best words in BBQ are “I ain’t mad at it”. Meat church is King 👑
Wouldn’t say I’m a huge bologna fan, but you’ve got a great idea for cheap. Definitely gonna give this a try!
Matt I have smoked many chubs of bologna. I love how after it is smoked how its taste Changes for the better. It will have a complete different tastes and my neighbors and I love it. All the smoking that I love to do I share with my good neighbors and they really enjoy when I smoke the bologna.
I am so glad this video popped up! I just bought a chub and was getting ready to smoke it today!
I smoked my bologna chub today to 180°. It came out perfect and the Gospel rub tastes great on it. My fried bologna sandwich was wonderful. I fried the bread on both sides like you would if you were making a grilled cheese sandwich. I used miracle whip and lettuce and tomato on it. Another great recipe from Meat Church. Great Job Matt!
Idk if anyone else has said it but fried bologna, toasted white bread, and yellow mustard is all you need! Grandparents cooked it for us all the time and it definitely beats white bread and mayo 😂 cheers and Geaux Tigers!
I can't remember the last time I had a bologna sandwich! I do remember as a kid I would cut a slit in the center so it wouldn't dome up while frying it. That looks fantastic Matt!
There was a little country grocery store near the Nucor Steel Mill in Charleston, South Carolina that served baloney and cheese sandwiches. Two pieces of white bread with mustard, a thick slice of cheddar, and an equally thick slice of baloney. The whole sandwich weighed about 1/2 pound and didn’t require anything else but a drink. Good, simple food. Darlington, South Carolina
Never had a bologna sandwich, looks delicious.
Yum! I would love this with some tomato slices and a runny egg.
I've done this but then made bologna burnt ends. AMAZING!
That’s a fine looking chub you got there! That Ranch Rider jalapeño ranch water is awesome. 😎
Shout out to Levi! Lol! My grandma used to make us fried bologna sandwiches with tomato soup. I still make it for my grown up kids. Comfort food.
I used the same Bologna and used Swap boys howler yellow mustard as the binder with Texas sugar seasoning. Put it on my Weber 22 and smoked it with Hickory and Oak. To finish it off I coated the burnt ends with sweet baby rays BBQ original and they are amazing.
Bar-S factory literally right down the street from my house (Oklahoma). I grew up off fried bologna sandwiches.
"It's fun to play with your chub.."
🤣🤣🤣🤣
“Spend a little bit of time on. All nice and slathered up.” 🤣🤣.
It is as much about the childhood memories as it is the taste.
Thinking back over 60 years to 1961, when riding my bike home from high school, I was the typical famished teenager halfway between lunch and supper. If I had a jingle in my jeans I'd stop at the corner grocery for a single *thick* slice of ring bologna. I'd fry that up in my grand mother's cast iron pan (which I still use at 78) and chow down with Wonder Bread and Miracle Whip. That would carry me until 6 PM when my parents got off work.
To this day I still love fried bologna. My wife thinks I'm certifiable.
Thank you again. I love how you share your arsenal with us who are new. The VA just gave me a new wheelchair that raises which makes smoking much easier
If I really want to go old school with my bologna sandwich I use the cheapest bread. Mayo both sides. 2 slice of bologna with 1 slice of American cheese. Then the key is to put it in a baggie and then in a plastic lunch box. Then you just let it fester in a humid building until lunchtime when the cheese has basically melted. So good.
Best sandwich ever!
I love fried bologna grilled cheese !!!
My nephew gave me a bologna this past Christmas. Was planning on smoking it this weekend.
Bologna is awesome out of the package! I got a quarer log smokin now, bub!'
When I make this recipe, I add a bit of a low salt rub (like texas sugar) to the top of the slice to give the sandwich a little extra kick. Always a winner with the family. Thanks Matt.
“…it’s fun to play with your chub….” 🤭
Will definitely be trying this cook. Looks delicious and takes me back. 👍🏼🇨🇦
It also makes a great breakfast sandwich. Add a fried egg, cheese and BLT. Is a staple around my house.
Yum!! Need to smoke a chub and try this. DUKES! Yes! Only mayo!
Ok Matt , we are headed to wal-Mart right now to buy us a chub to cook tonight. But here is the down fall we don't have a Levi that licks his own chub . Great inspiration you are .
My Grandpa gave me his cast iron pan skillet, Its nothing special but it's one of my favorite possessions.
Who doesn't love some fried bologna??
Need that "May the Pork be with You" little sign you have😍 Awesome video as always☝️🔥
I grew up on fried bologna (with a slice of melted American cheese and mustard). For my Mom, this was a step up as she used to eat lettuce and mayonnaise only sandwiches or at least that's what she told me :)
HA!! Alabama Tenderloin, I love it! Brought back great memories of the "old timers" bringing this to the deer lease and frying it up, was SO good! Keep up the AWESOME work!
OMG Alabama Tenderloin!! I can't stop laughing. Best comment ever. Thank you for saying this, whoever you are
Haven’t even watched and im all about it🤘🏼
My most prized possession is my cast iron pan that belonged to my Granny!!
I've always done my fried bologna sandwiches with just yellow mustard on plain white bread, never done mayo. Gonna have to try that!
You "like to play with your chub" LMAO!! Love the subtle humor Matt🤣
I love fried bologna, but it doesn't like me anymore. Was drooling watching this video. Thank you for bringing back great memories.
It's fun to play with your chub ~Circa 2001
Awesome! Hate going to Walmart, but being forced to go now!
I've been wanting to do one of these...I think you just convinced me.
Thanks Matt for another great video
It's fun to play with your chub 😅
I see what he did there HeHee
Bologna RULES!!!
Last time you did this you were at the lake. ;) Looks fantastic. Congrats on the 10 year anniversary! Well deserved.
Thanks!
Thin sliced home grown tomatoes are great on that sandwich!
And most important... Who cares what's in it!! It's good
Great video Matt, my condolences to you and your family, many blessings your way man. I guess this now should be taken to it's logical conclusion:
Bologna Burnt Ends
I'll keep you posted 😎
Great grandmother would make those for me and my friends for lunch on Saturday's before we'd head to the public pool. Great memory you brought back Matt! Awesome video too. Will give that a try. Finally bought Blanco! Fanominal!!
Brings back memories of my childhood, we didn't cut the bologna as thick ( had to feed everybody ) and generally added a yellow mustard and onion along with mayo.... fried bologna is an all time favorite at our house!
Mouth watering ✅️
Man Matt I make smoked bologna burgers on a regular . I like your vodoo seasoning on them with a slice of pepper jack, yummy.
I love that you did this. I remember my family having bologna sandwiches growing up too
Sweet south dallas round steaks!!!!
I grew up on Lebanon Bologna, being from Pennsylvania. My friends from Maryland call it sour balogna. Haha.
White bread, American cheese, Lebanon balogna, Mayo (Dukes now) and lettuce. Ohhhh supreme.
@rocketman5x Fried sweet Lebanon bologna sandwich with sweet and spicy pickles! Cut three slits in it like pork roll to keep it from getting a bubble in the middle when fried!
There was a little gas station on Riverside Dr in Ft.Worth that made bbq bologna sandwiches and they were good
Will have to search this out across the pond here in 🇮🇪 but looks great. You couldn’t write that scene with Levi back in the day 🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣
I have sliced it, put it on the gas grill and sauced it low temp for a couple hours...delicious!! 🙂I need to try sliced on the smoker....🙂
Raised on bologna and spam. Having it fried was a treat! Takes me back for sure.
Just smo-fried a S-Bar from WallyWorld chub this weekend using some Blanco and Texas Sugar since it was mostly chicken content. What greatness, thanks Matt…keep preaching the good BBQ word!
Grew up on bologna and onion sandwiches. Thanks for bringing back some memories.
Thanks for sharing! Great Stuff!
Love this. I hate mayo but would love that sandwich with mustard
Man. This brought back some memories. Another great video. Thank you.
You can’t go wrong with a fried bologna sandwich, adding smoke to it would definitely take an already amazing sandwich over the top
I love me some fried bologna. Living in Al I always cook mine outside. I use either Honey Hog or Deeze Nuts. Man that a sammach!
I grew up in WV and Eat Well bologna from SS Logan was a staple in our house. Love fried bologna sandwich with cheese and a fried egg. Love cold bologna sandwich with mustard and Snyders potato chips on it. My Mom also made us bologna salad sandwiches which were great. My wife and I now have her old grinder she used back in the 70s-80s to make the bologna salad for ourselves. After watching this I'll be smoking a chub soon.
I did it many time and it's great .
I've made this after watching the last video you made. It's AMAZING!!! I love a fried bologna sandwich on white bread w/ Dukes mayo!! Thank you for sharing this!
As a low income southern kid i grew up on fried bologna, but not like that. Man that looks good i know what i am doing this weekend. It’s mustard on bologna sir
Nothing like recreating nostalgia. That looks great. Cheers, Matt! 👍🏻👍🏻✌️
Looks delicious!!!
Thanks for the bologna prices Joe.
Looks great!
Awesome looking ! Going to try it soon. Fortunately, may have to get used to it. Most of America will have to be eating baloney pretty soon. And the hoity-toitys that don’t want it (Stay out of my yard !)
We always called it Newfie Steak up here in Canada...but I like Alabama Tenderloin.
There is nothing like fried bologna. Like Mighty Joe Yim said in a video “ nostalgia has a great taste”
I loved to come home to a Bologna and tortilla taco when I was a kid. Never tried the smoked and seared bologna sandwich, but I will now. Thanks dude. Always enjoy your videos.
Darn Matt you took me back to the WAY BACK TIME MACHINE! Can any one please help me with what that cartoon was??
Bologna is my favorite lunch meat
Absolutely awesome! Same here with grandma, bologna is the best!
Love using the honey hog spicy on smoke bologna
