    Serves - 4
    Ingredients -
    500g (1.1lbs) - Penne
    1 1/2 Tbsp (30ml) - Olive Oil
    1/2 - Brown (Yellow) Onion, Diced
    4 - Garlic Cloves, Thinly Sliced
    2 Tbsp (40ml) - White Wine or Vegetable Stock
    1 1/2 Cans (600g-1.3lbs) - Diced Tomatoes
    3 - Basil Stalks (Optional)
    1 1/2 tsp (7g) - Granulated Sugar (Optional)
    180ml (3/4 Cups) - Thickened Cream
    10g (0.3oz) - Basil Leaves, Roughly Chopped
    Seasoning To Taste
    Parmigiano Reggiano Cheese, Freshly Grated To Serve
    Cracked Black Pepper To Serve
    Basil, Thinly Sliced To Serve
    Extra Virgin Olive Oil To Serve
    Notes -
    To store, place in the fridge for up to 4 days and in the freezer for up to 4 months.
    To Reheat, place it back into a large pan over medium heat. Heat it gently for 10 minutes adding in a splash of cream to freshen it up. Alternatively, place it into a microwave.
    You can also add baby spinach to this recipe. Fold in 120g (4.2oz) when adding in the roughly chopped basil and continue the recipe as per normal.

    Jack, another great recipe. You do a great job of explaining the process, and the role of each ingredient. I also like to use sugar to cut down on the acidity of tomatoes. Have you ever used baking soda to neutralize the acidity of the tomatoes? When I make a large batch of tomato sauce, I'll add a quarter to half a teaspoon of baking soda to neutralize the acidity, and then also a bit of sugar. Can't wait for the next recipe. Thanks for your hard work in posting these videos.

    Great and simple recipe, Jack. A bit of sugar makes a big difference, especially if tomatoes themselves are not too sweet. Keep them coming chef.

    Perfection! A recipe that was uploaded on my birthday yay! Looks yummy and it's quick to make that's another yay for it! I can't imagine that idiot me made white sauce and added tomato paste to it thinking that's how rose sauce is made oh not to mention filling it with cheese of any kind and sometimes even several kinds

    Looks nice, I've found with recipes thats require thicker cream i fnd them a little sickly so opt for single cream. I can normally stomach a lot of rich food but my preference is less cream.

    I have a question, chef Jack. I saw a french chef insist that the 'heart' of the garlic clove be removed before utilizing it. Why does he insist on that step of preparing a clove of garlic? What is your opinion on the matter?

I’m trying to lose weight so I’m trying to be as accurate as I possibly can get with the calories you provided for the recipe (468). I appreciate it so much.       No, it’s thickened cream. Similar to whipping cream and has a fat percentage of 37%
