  • In this special episode of Burger Scholar Sessions, George Motz pulls back the curtain on an international street-food icon: the spicy Malaysian egg burger! This burger is so famous that it goes by several names-the Ramly Burger, the Sloppy Burger, and the "Sampah" Burger, which translates to "rubbish" in Malaysia. But this burger isn't rubbish at all; it's a total flavor bomb. Wrapped in an egg and covered with spices, it's one of the craziest burgers George has ever tried. And now he's giving you the tools to make one at home. Warning-it's spicy!

I'm Malaysian and I approve this message. We will call that "burger daging special". Which means, special beef burger, wrapped in egg. Without the egg, it ain't special. If its without the egg we will call it "burger daging biasa" which means "normal beef burger".

The fact that he used margarine to toast the bun shows how expert and passionate he is in burger culture. Here in Malaysia we don't toast our buns in butter because it's more expensive, and Motz represent the burger accurately.

I respect this because anyone who wants to actually cook this, can make that decision, but he doesn't do it like Gordon Ramsay and the other pro chefs do where they find a delicious, culturally rich dish, and then bastardize it with all these absurdly expensive ingredients just in order to make it more expensive. While if I made this I'd definitely use butter, I love that he isn't. Like if Ramsay made this he'd be doing the most bs making butter in home, with ground filet and sirloin beef, hand made brioche bun, and some 10 year aged cheddar, topped with hand grown spices that taste nothing like the actual seasoning. Oh and fuck tons of olive oil.

So I lived in Malaysia AND during my time found the secret to the best hangover/recovery food I've ever come across. Not only have I never shared this before, this is the first comment I have ever made on youtube despite having an account for over 10 years: After a late at night get one of these burgers (preferably a double), but instead of eating it put it in the fridge overnight. It will congeal in some special way. In the morning get out a pan put some butter or a little oil in a pan and take the burger out of the fridge and cook it top and bottom and all sides like a cube. This way the outside is warm and crunchy and the side is warmed up but not cooked again. When you eat it will be some weird magic where the soft inner bun and the ingredients have fused into an almost undifferentiated oneness, all captured in a crispy outer shell of the pan seared bun. I fear I am too old to survive eating one now, but if you are young or young at heart, go out in the tropical night live life, and eat one of these in the morning and think fondly of me.

McDonald's was out of reach for most Malaysians back in the 80s when it showed up. It was too expensive. Ramly saw an opportunity to make an affordable version using the cheapest meats & ingredients, hence the very fatty patty and abundant use of margarine (which is super cheap in Malaysia as it's made predominantly of palm oil).
The generous saucing is how most Malaysians like our food - wet. Not moist. Wet.

I can walk out of my condo , and 20 yards either way is one of these burger stands, they are all a little different ........I truly love this burger !! The only difference they have compared to your 's is the meat patty. In the true tradition of the burger , they use the supermarket hockey puck patties , super processed.
The burgers are so sloppy , you almost have to eat with a knife and fork, or chopsticks. The Malays love their chili , so they are always super hot ..........And you will be singing that oldie , but a goodie the next day.........Burning ring of fire ,by Johnny Cash.

I can safely say that at some point in a Malaysian's life , they have had this burger . I grew up occasionally eating this burger and it's always afterschool/classes . But , RM 4 for a burger , for younger me , was too expensive and was not that fulfilling so I decided to pull a big brain moment and buy two RM 2 burgers . I grew up thinking Malaysian burgers was only Ramly Burger until I saw Otai burger , a rival street bruger stall , in the Malaysian streets . The preparation of it is similar except Otai Burger had a choice of 2 different kinds of patty , which was a seasoned patty but with less meat or a 100 percent meat patty . The former was cheaper than the latter .
A funny story about Malaysian burger was from my friend who's family migrated here from the US of America . We call him the Burger Inspector because the guy liked burgers . One day when he was eating this Ramly burger , the first bite he took was pure ecstasy to him , that was until he took the second bite . The second bite was along the mid section of the burger which had sliced cucumbers on it (some street burgers stalls do that ) and he was in shock . The horror shown on his face as he took the second bite was priceless . Safe to say that everytime we order Ramly burger , he'll be careful and ask for no sliced cucumber . To him , the only greens that goes on a burger is lettuce , onions and PICKLES .
Thank you George for showing the world the Malaysian Burger , you truly are the burger scholar . I assume you are also the reincarnation of the burger king .

Always my go to meal when I'm working late at the office & didn't had the chance to have my dinner. Driving to the seven eleven near my house and I'll be so happy to see the bright lights coming from a ramly burger stall. I don't know bout others but I like to stand near the stall and I watch the burgers being made especially when they wrap the patty with the egg. Thanks George for introducing our Malaysian Burger to the world.

I will always order the special beef burger (double patties most of the times) with a slice of cheese. Extra Sauces wrapped inside the egg (not outside), moderate amount of cabbages with onions & of course will ask for properly toasted (with margarine) buns. That's my perfect Malaysian Ramly burger.

To give viewers in the US an idea of what Maggi tastes like: My dad calls soy sauce "Chinese Maggi". The two are fairly similar, being thin dark sauces that are very salty and with a strong umami flavor, only Maggi tastes strongly of the herb called lovage. But if you can't find it at all, just substitute with soy sauce. It's not the same but it's close enough.

I'm from Poland and Maggi is super popular here! It's mainly used to add flavour to chicken soup (or stock). But you can easily substitute it with some marmite, MSG and a bit of soy sauce.

Hey George! Thank you so much for this. Just had my day lightened up the day watching this. Thinking back when I used to save up my pocket money just to cycle down the street for one of these. I would love to share with you two "recipes". One which I picked up when we were still medical students in the interiors on a budget craving for this and it's simply not available.
    1) fry an egg, toast bread spread with margarine, throw egg on toast, spread mayonnaise, chili sauce, ketchup and of course the maggie seasoning.
    2) mafia burger. A lil more exclusive when we're feeling on top of the world. Take a Ramly beef and chicken patty. Mince it with the spatula, roll it into a ball, splat it good on the grill and continue with process like usual. Oh and grill up some caramelized onions for that good good yum yum in my tum tum.
