I once heard Alton Brown say that he adds a thin layer of mayo on the bottom bun, not for the flavor but for the fat layer than can delay the grease from the burger soaking into the bottom bun. I've tried it and it works. It doesn't alter the flavor of the burger but it does keep the bottom bun from becoming soggy too fast.
It's the same principle as brushing your pizza dough with oil before putting the sauce and toppings on it.

This is true. I remember Alton saying that in the sliders episode of good eats. It really does work.
Same with giving it a light toast on the flat top or pan in some butter.

I love that Carolina style chiliburgers are so loved by someone who's had so many burgers. It really is a treat.
Chili, slaw, onions, mustard (optional but a regional favorite). It doesn't get much better and is always filling.

As a North Carolina Native you forgot one key ingredient. It's always topped with yellow mustard but I'm glad to see this amazing burger get some recognition!

@@Blimeygit Officially in NC "All the way" is mustard, onions, and chili for either hamburgers or hot dogs. Slaw is not standard, but a frequent add-on, more typical on hot dogs, but still pretty common on hamburgers too. Not aware of a specific line like Eastern vs Western BBQ, but my experience Chapel Hill and points east. (Source - worked my way through high school in the 70s at a SE NC grill, a former Dairy Queen that changes its name to Dairy Cream in the late 60s when they changed the franchise rules.)

@@robertelee63 I do not intend to discredit your experience. I've only been on this earth for 26 years, but currently "all the way" that includes slaw is without a doubt more prevalent than without, at least in Wake County.
@@54TheBeast54 I understand your expectations may be different today, but in the 70s I prepped thousands more all-the-way burgers or dogs without slaw than those who added it. Maybe today in the Triangle slaw in added, but head east. What is standard in Sampson, Wayne, Craven, or Brunswick.
As someone thats lived in NC all my life, this is very accurate. The chili burgers here are incredible
Represent with the Carolina slaw burger! Also if you really want to push it over the edge, add a bit of yellow mustard on top. The savory beef and the acid from the vinegar in the mustard really make an amazing combo. Just make sure you have a lot of paper towels because it is a messy beast.
George Motz has become one of my personal heroes. A few times every month I make one of the burgers he has shown on the show, and I'm almost always blown away. Thanks for making these wonderful videos.

I've had one of those North Carolina Slaw burgers at a Barbecue joint and it was amazing. The slaw really livens up an otherwise sleepy chili burger!

@@jarrellmason9080 Lake Gaston is BARELY north carolina... There are carrots in slaw in tons of places in NC.

@@jarrellmason9080 My point was, using Lake Gaston as your frame of reference for NC cuisine is incredibly narrow. There are so many bbq and burger spots that use carrots in their slaw. Hell, Smithfield's uses it and they are the token NC BBQ chain.

Is it just me or does Motz's voice and vocal fry just have this amazing ASMR quality that's perfect for cooking shows specifically burger cooking shows? He quite literally gets you salivating with his burger descriptions.

What I find interesting is that here in Quebec, we'd call that "Michigan-style" because it's simpler to communicate given that Michigan-style hotdogs are a staple here. What makes this interesting to me though is that it's basically the only imported burger recipe that I can think of that's mainstream here. Kind of like the history of the Chili Cheeseburger, if a restaurant servers burgers and chili, it wouldn't make sense not to combine them.
Funny, that kind of dog is called a Coney-style hot dog in the US. If you're not aware it was a style of hot dog popularized on Coney Island(New York) and then made its way across America
Actually here in America it is extremely difficult to get a good coney outside of the state of Michigan... So that makes perfect sense a coney should be called Michigan style... This coming from a seasoned traveler of the states.

Living in NC, while slaw is commonly served on chili burgers, the original is chili, chopped onions, and yellow mustard - sans slaw. HIGHLY recommended.
Now, a classic, old school chili is just beef cooked very slowly with a little water and salt, until... just right 😉. I have had it with a little bit of cinnamon or allspice added, but just a light touch.

Thanks for this, I tried few recepies and it's something amazing. I can actually taste some American Burgers in Poland without traveling, I learnd how to cook without burning mysefl or house to the ground and made my kids extream happy as lokal burger restaurants provide crap. So even poor cook as I am did better then loosers from polish restaurants. Definatelly I try this one as I loved chilli, habanero, jolokia or even CReaper and Coleslav is what people in PL do very good and also spicy.
Can I get a Smashula? I want it. I need it. I'm willing to pay for it.
