How to Cook 2 Regional Fast-Food Burgers with George Motz | Burger Scholar Sessions

  • Burger Scholar George Motz is taking you on a ride through regional American fast-food burger history! A lot of the big, commercial fast-food places have given the hamburger a bad wrap. Which is why George wants to set the record straight and show you two family-owned, hyper-regional burger chains that still do it right-Swensons in Ohio, and Fat Mo's in Tennessee. These beloved burgers are highly unique, and take a few twists and turns to get to the finished product. Swenson's "Galley Boy" burger uses both barbecue and tartar sauce. Meanwhile, the "Double Mo" burger from Fat Mo's incorporates a secret 18-spice Persian marinade. In the words of George, "These places are proof that you don't have to sell out to be a success!"

    My dad worked at a factory very close to the original Fat Mo’s for 40 years. When I was a kid, he would bring home a bag of Fat Mo’s burgers every Friday night. Thanks for the trip down memory lane.

      @@micktyler6579 yeah true. It came about because the voice actor was vegetarian (vegan maybe?) and they wanted him to do advertisements for meat as Shaggy. As far as I know he fired back and said he wouldn’t voice the character at all until they changed him to a vegetarian.

    Love it! Swenson’s is a gem in NE Ohio. Great job on the recreation of the Galley Boy. The only ingredient that no recipe can recreate is the memory of eating there as a kid!

    As someone who grew up a couple miles from a Swenson's I'm really happy it got some love on Burger Scholar. I always figured George Motz knew about it given the more obscure places he's been, just happy more people will learn about the NE Ohio gem!!!!

      I grew up nearest the original Market St. location in Akron. Back then (early-mid 80's) it was just a nondescript cinder block building with a parking lot around it. I was surprised by how many Cadillacs one would see in such a slummed-out looking location -- which, of course, were grandparents spoiling their grandkids. :)

    There are several Fat Mo's in the surrounding cities like Murfreesboro and Smyrna that are sit down as well as drive through, and they also serve an almost 3lb burger that has all the normal toppings along with bbq sauce, sauteed mushrooms and onions, jalapenos and other stuff and GOOD LORD is it good

    I myself have worked as a professional cook in many kitchens but this show has taught me the true art of burger craft. Ive tried quite a few burgers from this show and everytime they turn out fantastic and better than any other burger I could get at a joint around me. Thankyou

    Swensons will always have a special place in my heart from going up to Akron with my dad, and now they’re in Columbus! I’m so glad you’re doing a video on them :). The Galley Boy is my favorite burger of all time.

    I love how both burgers look " simple" but George gets so excited "because it's all about technique" with them. Hopefully these restaurants will outlast the big (worldwide) burger chains

    I used to drive 200+ miles from Cincinnati to Akron for my Swensons fix. I live in NC with family in Illinois.. I drive through Akron (adds about 8 hours to the drive) just for my fix. Dang, it's been so long.... Need to make a trip and go! Another drive-in in the Akron area is Skyway. Similar burgers, also very good. George, I LOVE YOU for this!!!!
