    I'm from New Mexico, and that's accurate. We put green chile on EVERYTHING. The tumble weed is the most touristy thing I have ever seen.

      My favorite is from Santa Fe Bite, formerly Bobcat Bite. You also have to dice the green chile. Restaurants outside of NM try to filet it on the burger. One bite on you pull the whole chile out.

      He visits his brother from another mother every Christmas and their meetings are always so heartfelt. With open arms his brother welcomes George into his home. George goes past him and straight into the kitchen. When George eats burgers it's just like visiting an old friend, it never gets old.

    Our dad fed us olive burgers for the first time when we were just little squirts on our way home from a super long day at Disney Land. He bought a bag of plain McD's burgers and then green olives and mayo from some store and blew our minds with how great these were. Thanks for bringing back that great memory man!

    As Michiganders, we decided it was important to make both versions of the Olive Burger from George Motz's "Great American Burger Book". The Mr. Fables may be the more famous and lauded, but the version George makes in this episode is the one we preferred! Much easier to assemble and tasted about the same as the other. Keep the George Motz episodes coming! Love that guy!

    Ex-Michigander here (lived there from '81-'92). I worked at two of the first restaurants of Hot-n-Now (in Plainwell and Kalamazoo), may that wonderful burger joint rest-in-peace. Midway through their existence they started serving the Double Olive Burger. It was surprisingly good. And hey, if you need any backstory on Hot-n-Now from one of the original workers, give me a holler any time; glad to share history. :)

      I grew up in Otsego and we went to that Plainwell location all the time. The prices were insane for what you got. I was back visiting my parents for the holidays and the building is still there, but now it’s a Jimmy John’s. It’s the same distinct shape and I will always refer to it as Hot-n-Now!

      When he was making that. I was thinking about my wife's delicious green chili hamburger cheese dip. One pound of hamburger browned in a slow cooker on high, add one packet of taco seasoning, one cup jar of cheese whiz, one package of cream cheese , 2 oz of green chilies chopped, meltin stir together, reduce heat to simmer or less. The longer you let it simmer the more the flavors Mingle. Just before serving with taco chips, cut fresh squeaky cheese (cheese curds) into smaller chunks and mix into the pot. That makes my mouth water!!!!! If there are not a lot of people at the party eating it, it's like Lay's potato chips for me. I will sit and eat until the pot is empty!

    Michigander here. The Olive Burger may look/sound disgusting, but it's actually delicious. That said, if you don't like olives or mayonnaise, obviously you're not going to like it.

      I make mine by cutting up olives then adding some cream cheese..
      THEN a splash of milk or half n half to thin it down. OMG....good stuff

      I eat green olives as a side pick like eating chips. I would of never thought of mixing that with Mayo on a burger though. I’m going to have to try this next time I make a burger! What kinda Mayo would you recommend? Miracle whip or real Mayo?

      @@chefman470 I never would have thought of making it myself If someone else hadn't introduced me to it. Not personally a fan of Miracle Whip, so I've only tried it with regular Mayo (which for me is just basic Hellman's), but as the above guy showed, there's lots of ways you can make this your own.

    Regarding the Olive Burger, we have a similar variation in Northern Minnesota - instead of mayo, we use cream cheese.

    *I posted this a few weeks ago when he made the green Chile cheeseburger in a different video. I thought I'd leave it here as well.*
    I'm from New Mexico, born and raised, and I'm surprised at how accurate these burgers were.
    We ALWAYS try to cover the entire patty with green Chile.
    Some quick cultural learnings from someone who has lived in NM for 30 years:
    1. Native New Mexicans rarely call our green chile "Hatch" chile, mainly because chile is ubiquitous in NM and we do not tend to differentiate the location. Although, as Colorado pushes their green chile into the mainstream, this has been changing over the years. I still wouldn't count on a native New Mexican to say "hatch chile". Most people who eat NM Chile have never even been to Hatch.
    2. Depending on where you are in New Mexico (north or south), our xxxhot batch is usually called "lumbre" or "barker". You can get any type of batch in ALL parts of New Mexico, from mild to xxxhot. I usually buy a bushel of hot (usually called "Sandia") and a half bushel of xxxhot ("lumbre", or "Barker") and mix the different peppers 2:1. This makes for a delicious taste with a really intense heat.
    3 As the green chile ripens, the green chiles turn into red. We make a delicious red Chile sauce, with these peppers, in NM. In MOST locations, you can ask for a mix of green and red Chile called "Christmas". This is what I order every time I eat out. In fact, the official state question is: "red or green?".
    4. Finally, off the top of my head, some of my favorite restaurants that serve GREAT green chile cheeseburgers: "Sparkys" (hatch, NM)," Blake's Lotaburger" (All of NM), "Days" (Las Cruces, NM) "Laguna Burger", "owl cafe", "frontier"(ABQ, NM), "The Burger Stand" (Taos, NM).

    Every time I make smashburgers for family the kitchen is a giant mess of splattered grease all over the stove and smoke. I can't imagine what his apartment is like after filming one of these episodes. I've made butter burgers but never thought to put it on a smash burger. I'm going to try this!

    Pro Tips for everyone wanting to cook Green Chile Cheeseburgers at home: season your chopped chile with garlic and onion and it’ll taste infinitely better. You don’t have to cook it in water/stock as it’s already cooked when it’s roasted. And make sure to peel the skin off of it! If you don’t it’ll be like you have a bunch of little pieces of bitter paper or plastic mixed in. And only use “New Mexico” green chile - “New Mexico Chile” means the specific type/subspecies of chile that it is, not just where it’s grown - if you use others they won’t taste the same at all, and avoid “Anaheim Chile” because even though it’s technically from the New Mexico Chile cultivar, it tastes very different and nobody uses it here in NM, though it still tastes good and will give you a nice slightly sour taste.

      In NM they're literally used in everything even ice cream.

      Why? Portion control. Exercise does help, but unless you are fairly serious athlete, it alone will not prevent the kind of ridiculous obesity seen at the average Walmart. Due to the pandemic, I was temporarily laid off twice this past year (first time I haven had a job for for almost 30 years). The most exercise I got between the end of October and last Thursday, when I we finally reopened, was walking a few steps to my mailbox. My apartment is on the ground floor, so it didn’t even involve stairs. I wasn’t obese to start with, and I lost weight, because I ate healthier at home than at work (where I cook for a living). While mostly laying in bed and watching Netflix and CZcams. Nothing wrong with a butter burger, you just can’t eat one every day, and it helps to control what else you eat that day. Actually, even if you ate one every day, but the rest of your diet consisted of things like kale, spinach, and other greens, whole grains, seeds, nuts, fruits, and other vegetables, you can still loose weight. Although with all that beef and butter every day, risk of heart disease might still be increased.

      im sure they have stuff like that in other countries, its more just eating too much. a lot of americans idea of a normal portion is already too much food, and if you grew up eating that you feel like you didnt eat enough when you try to cut back. fat positive nonsense is obviously not helping either, unsurprisingly countries that are skinnier dont pretend being fat is healthy or attractive.
