    Here’s a lovely addition to your breakfast; homemade, oaty and delicious.
    This recipe is so adaptable too. You can vary the types of fruit and nuts to include your favourites. Add choc chips or leave them out. Use maple syrup instead of honey. Even drizzle honey on top before you serve. It’s great with yoghurt and fruit or add it to your winter porridge for a crunchy topping…

    Ingredients:
    240g rolled oats
    20g mixed seeds
    120g mixed nuts
    60g dried fruit
    50g chocolate chips
    100ml honey
    40ml coconut oil
    1 tsp cinnamon
    1 tsp vanilla extract
    1 tsp flaked salt
    Yoghurt, fresh fruit and chopped freeze dried strawberry to decorate
    Method:
    1) Preheat oven to Gas 4/ 180’C or 350’F
    2) Add all of the dry ingredients to a large bowl
    3) Add 1 tsp cinnamon, 40ml coconut oil, 100ml honey and 1 tsp vanilla extract
    4) Mix until all the dry ingredients are well coated
    5) Pop onto a baking tray lined with baking paper
    6) Bake for 20 - 25mins or until golden brown
    7) When cool, break up and store in an airtight container
