  • There's so many unique ways to use up your rhubarb stores in the freezer before another year of rhubarb is ready to harvest.

    Rhubarb Juice amzn.to/38Ip5MM (there are many options)
    Fill Steamer Juicer with chopped rhubarb. Juice according to your steamer's directions. Sweeten as desired or use in Rhubarb Jelly and Cran-rhubarb Mules.
    Rhubarb Jelly
    3.5 cups pure rhubarb juice
    4 cups white sugar
    1 box Sure-jel
    Mix all ingredients. Bring to a boil stirring constantly. Continue stirring for 1-2 minutes. Pour into clean jelly jars. Seal and water bath can for 10 minutes.
    Cran-rhubarb Mule
    Muddle 2 T. rhubarb juice, 1 sugar cube and lime wedge (or a splash of lime juice) in traditional copper mug. amzn.to/3LBtOyz Add 1-2 shots (ounces) cranberry vodka such as @DeepEddy. Fill cup with ice cubes or crushed ice and top with Ginger beer. Stir and serve. The cups keep the drink cold for a very long time.
    Streusel Rhubarb Bread pg. 40 in ACL cookbook
    1 1\2 cups brown sugar
    1\2 c. oil
    1 egg
    1 c. buttermilk or 2 Tbsp. lemon juice then filled with milk to 1 cup
    1 tsp. vanilla
    2 1\2 c. flour
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. cinnamon
    2 1\2 c. chopped rhubarb
    1\2 c. chopped walnuts
    Mix first 5 ingredients well. Then add in dry ingredients until just mixed. Gently fold in rhubarb and nuts. Bake in greased loaf pans at 350 degrees for 35-60 minutes depending on the size pan. Sprinkle with cinnamon sugar before baking. I like making mini loaves and freezing them to give away.
    Rhubarb Custard Dairy Bar
    1 c. butter
    2 c. flour
    4 Tbsp. sugar
    Fork together to make large crumbs. Press firmly into 9x13 pan. Bake at 350 degrees for 10 minutes.
    3 eggs
    1 1\4 c. sugar
    3-4 Tbsp. flour
    1\4 tsp. salt
    1 c. heavy cream or 2% milk
    6 c. diced rhubarb
    Mix all ingredients well and pour over hot crust. Bake at 350 degrees for 50 minutes or until custard is well set. Allow to cool completely.
    4 oz. gream cheese
    1\4 c. sugar
    1\2 tsp. vanilla
    8 oz. whipped topping (Cool Whip)
    Cream together first 3 ingredients and then fold in Cool Whip. Spread over cooled rhubarb custard. Chill and serve. This is a family favorite and always turns out so, so good.

    Jennifer, I'm watching your video posted 8-1-2019, where Peter created a new cookie. The cranberry with white dough & extra baking powder. I'm still watching it but wonder if you & Peter had tried to develop that into a second recipe. IT LOOKED REALLY GOOD if it could become a muffin that is cranberry filled or something. The basics looked really good. I think Peter will eventually be your sous chef. He's got a good eye for baking - maybe cooking. Great thing for boys or girls to learn. And Peter remembered his sister making a cookie from a food supplement. Smart kid!! I love watching your kids, they love each other & they all have certain things they excel in. Good parenting!! ❤️

    My rhubarb has been slowly dying so I am replacing (hopefully adding as I plan to save the older ones). this year and the new shoots just came so this video is very timely. My new kind is the really red variety so that is exciting. I have found the best way to clean a pot is to boil rhubarb in it, just rhubarb for an hour or so and then let sit overnight, the pots always come up very shiny, I always keep a little bag in the freezer of the end and green parts just very cleaning pots. I even clean friends and families pots because it is very satisfying.

    I sooooooo miss rhubarb!!!! My grandparents had them growing and we would grab a stalk and took off running and kept playing as kids 😆 I grew up in Dubuque Iowa but last 20 yrs I live now in Beaumont texas area ..send me jelly 🤣🤣🤣

    Fun fact that rhubarb is technically a vegetable but is legally considered a fruit in the US because it is used in more dessert type dishes and sweet foods. 🙂

    I kindly ask you If you have heard of a Barbados blue alcoholic drink not a blue lagoon
    You need as follows
    A measure of blue caraco (blue bolls)
    A measure of malibu rum with coconut
    Then sparkling water or lemonade
    An adult drink only
    A Cranberry salute
    A measure of vodka
    Smirrnof
    In a tall glass
    With ice
    Add pureed Cranberries
    Add morichino cherries
    Mix together Voila ❤️

      I've never seen it in Central Florida as well. I don't believe I've ever seen packs of seeds for rhubarb either.

    When I was a kid, my grandma Tonyan had a rhubarb plant in her back yard. I would cut a stalk off and dip it in sugar and nah on it. The original sweet and sour candy. 😆 I ❤️ the 80’s

    I love rhubarb but I haven't had a recipe that doesn't call for strawberry and as I am allergic to strawberries I can't have. I am glad you have rhubarb recipes in your cookbook I will have to try some of them.

    Perfect timing! My rhubarb is ready to harvest already. I planted a lot of it because one of my coworkers used to love my mom's strawberry-rhubarb freezer jam recipe. (Very similar to your rhubarb freezer jam.) Great tips on the steam juicer. I have a different brand and it didn't have the same type of chart so I've just been drawing off juice as soon as it shows in the tube. Definitely going to do it your way from now on. So far I've made rhubarb-lemonade concentrate and regular jelly from the juice but our favorite thing is rhubarb-habanero pepper jelly. Oh boy with cream cheese on a cracker it is amazing! Looks like I'd better try your cute little rhubarb breads soon. Thank you Jennifer, hope you are having a lovely May.

    I have a steam juicer like that one as well. You can place a marble in the bottom section with the water, if it runs dry the marble will rattle and let you know.

    I love my steamer specially when making rhubarb juice which I freeze or can. In the middle of winter a glass of juice with a sweetner of your choice (I use 7 up with added sugar if required) tastes like summer. I also use it for apple juice or making cranberry jelly. I tossed out the jelly bag and stand when I got this tool. To help with water levels I put about 5 marbles in the bottom and when it gets noisy I know I need more water. Love the video. I have 7 old time rhubarb plants with dark red stems and is more on the sweet side. I got my plants from farms where the houses were being torn down and they were plowing all the plants - rhubarb, strawberries, raspberries I couldn't get the apple and crabapple trees those were just cut down. and you are so right - do not try and double or triple a jelly or jam recipe. It does not work - I have 35 jars of rhubarb and strawberry jam where the fruit floated to the top, it looks nasty on the shelf. the fruit has separated out and the consistency is not worthy of serving to guests.

    I love rhubarb and I lost mine a couple years ago when I had to move it. Will be trying to start again as we are starting again. Interested in these recipes. Mom didn't do a whole lot with rhubarb other than stewed rhubarb rhubarb pies and cobblers and she did make a lot of what she called Rosie rhubarb preserves which was a recipe for my friend and it was excellent if I can find that recipe as I'm in the process of packing and moving I will send it to you it is a wonderful thing and according to what your family likes I think you would like it too

    Oh the other two I wrote before I finished watching the video glad you got your pot cleaned out but the soda will also work. As far as the rosie rub jam you're almost making it although after you said the kids didn't like the chunks you may not like this either but it has a can of crushed pineapple in it and it's quite a bit of pineapple so it would probably work in your freezer jam I would think if you put the juice in it you might want to put two boxes of jello in it but that's basically what the recipe is it's the rhubarb the pineapple and the strawberry jello and I always loved it as a kid but I liked chunky jams and jellies a lot. Love your recipe and thank you for sharing and that dairy bar looked delicious while I was on here with you I texted my sister-in-law and asked her for she's got kind of a creamy she calls it a French rhubarb pie that I always liked but I didn't like it as well as plain rhubarb pie but I think it might be more family friendly to my family that doesn't really like the flavor of rhubarb if you get what I'm saying. Thank you very much for sharing I really like this I can think of yours that I would have loved to have a steam juicer I don't know if they weren't out yet or just I just didn't know about them it's 68 I probably won't invest in one but that looks so cool

    Hello Jennifer,
    If you like water melon 🍉
    Jennifer If you were hosting a party etc then take note of this:
    Buy three watermelons 🍉
    Place one each on a separate sheet pan like a rugby ball
    Label each one
    First one as plain
    Second one Smirrnof vodka
    Third one
    Bacardi
    Second one cut hole in this one Place a funnel into it
    Just say that you are hosting a party or barbecue
    Add a capful of Smirrnof vodka in funnel
    Do this every hour on the hour until hosting then serve
    Do the same with the third one
    Second and third are adults only
    Delicious xxxx

    My Mama Pearly Alice made Rhubarb Jam using Black Cherry Jello. I had the hardest time finding the Jello. Finally, found that Krogers had it in their store brand. I have 10 boxes waiting to make jam. I received my steam canner on Friday. I have 2 waterbath canners, but if I can get the same results without using all that water, I will be happy. Now waiting for the rhubarb to come in. I'm so excited to see how the new canner works.

    Rhubarb was a childhood fave of mine. My cousins and I used to dip the raw stalks in sugar and just snack on those lol another fave way to use it is in Strawberry Rhubarb pie topped with vanilla or cinnamon ice cream❤️ Those custard bars look divine✨️

    Maria's pot holders are gorgeous!!! My daughter used to ask me to make Rhubarb pie (NO strawberries or anything else, JUST Rhubarb) or we made cobbler with it. SO delish!! We grew lots of it in NJ and we had a friend that would give us a bunch of it up here in Pa. when we moved. SO delish!! I like it mixed with strawberries sometimes too. LOVE your sweet videos!!!

    Hi Jennifer. Always love spending time with the Brockmans. I recently bought rhubarb jelly and I love it. My favorite is red currant but it is hard to find. Do not like my jams or jellies to be too sweet so rhubarb and red currant fit the bill. Hugs and blessings.

    I usually make the rhubarb-strawberry tart from Pillsbury. It has a custard base with streusel topping and calls for pie crust. I prefer to use all rhubarb and add almond extract. It’s delicious, but those custard dairy bars sound especially yummy… 😍 On my list now, and I’m totally going to try juicing our rhubarb this year. Maybe make it into a simple syrup for sno-cones and flavored sodas? 🤔 Excited to experiment in the kitchen!

    Have you ever added ginger to the rhubarb when making jam (jelly) loved my mum’s rhubarb and ginger jam. She also use to make a pudding lemon jelly (jello I think you call it) add stewed rhubarb to it you could just add the jelly to the rhubarb, and let set then cover with custard, don’t know what you call it but perhaps wiped cream would do, a lovely summer sweet.

    An awesome jam recipe is Rhubarb jam with cherry pie filling. It is so good on ice cream or pancakes. You could probably use strawberry pie filling if you don’t care for cherries. You can find the recipe online.

    I used to live in the Midwest and had rhubarb available everywhere, now we live in Arizona and rhubarb if you can hopefully find it, is considered gold.

    The bottom of your pan where you scorched it a few years ago try boiling it with a lot of baking soda in the water dump it out and scrub it with an SOS pad I bet it will come out.

    I recently found that citric acid (fruit fresh) works on my stainless pans to get the stubborn gunk off. I sprinkle some on and scrub with my dish brush and soap and it comes off!!

    I love rhubarb, but I am curious as to why when you made the jelly you added the pectin and the sugar at the same time, generally you add the pectin, boil, then add the sugar, bring back to a boil for 1 minute when using powdered pectin? You do the reverse when using liquid pectin, fruit, sugar, boil, then add the liquid pectin, boil, jar.

      @@Souperat60 Darlene I do not have a recipe for crock pot mac 'n cheese. My friend always bring Kraft mac 'n cheese to every single potluck. She makes a ton of boxes and puts it in a crockpot with a little extra moisture. All the kids love it because let's face it, potluck food isn't always a kid's fav.

      I wash it, chop it, measure it and freeze it.

    Do you always freeze the rhubarb first? Do you feel it softens and steams better that way?
    Or was that just cleaning out the freezer from last years?

    I absolutely love love love rhubarb, and every stinking time I try to plant it it DIES!!!
    The sad thing is every one I talk to about this plant is saying they can't get rid of the darn thing. It just grows out of control
    Any advice on how to get it growing???

    We use just regular ginger ale, usually store brand, in our Mules. That might help sweeten it up a bit. (But of course without the ginger beer, you'll have to go heavy on the vodka lol)
