- Spying that first zucchini of the year is always such a thrill. 10 days later you realize you've planted too many and now zucchini are coming out of your ears. What should you do with them? Try these recipes. Between the two savory dishes the zucchini rice hotdish was my favorite and the zucchini pudding cake is a must make. It was so good and with that glaze it was a total winner. They sold very fast at the bake sale, too.
Zucchini Stuffing Bake
6 cups shredded zucchini
1 diced onion
1 cup grated carrots
1 can cream of chicken
1 cup sour cream
1\2 cup melted butter
1 (8 oz.) box of Stove Top stuffing
Cook zucchini and onion until fork tender. Drain juice off and discard it. Add all the other ingredients to casserole. Cover to bake. Bake at 350 degrees for 45 minutes.
Zucchini Rice Hotdish
1 lb. ground meat, browned
1 diced onion
1\2 diced green pepper
28 oz. can tomatoes with juice
1 envelope spaghetti sauce mix
1 cup Minute rice
4 cups shredded zucchini
Cover and simmer for 20 minutes. Place in casserole dish. Sprinkle with bread crumbs and shredded cheese. Bake at 350 degrees for 30 minutes. This was so good. Both Joseph and I loved this and ate all the leftovers.
Zucchini Bread
3 eggs
1 cup vegetable oil
3 tsp. vanilla extract
2 cups sugar
3 cups flour
1 tsp. salt
3\4 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
2 cups grated zucchini, peeled if you like
1 cup nuts, optional
Beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla. Mix lightly but well. In separate bowl, combine flour, salt, soda, baking powder and cinnamon. Add to egg-zucchini mixture. Stir until well blended. Add nuts. Pour into two 9x5x3 inch loaf pans. Bake at 350 degrees for one hour.
Zucchini Pudding Cake
1 pkg. yellow cake mix
1 small box instant vanilla pudding
4 eggs
3 cups grated zucchini
1 1\2 tsp. cinnamon
3\4 cup oil
1\2 tsp. salt
Combine all ingredients in mixing bowl. Mix together; then beat at medium speed of electric mixer for 4 minutes. Pour into greased and floured Bundt pan. Bake at 350 degrees about 50-55 minutes or until toothpick inserted in center comes out clean and cake pull away from sides of pan. Don't underbake. Allow to cool for a bit before removing to wire rack to cool. Make powdered sugar glaze and drizzle over individual slices.

In addition to zucchini bread I like to make stuffed Zucchini boats. Italian and Mexican are our favorites. I also slice and freeze it for soup.

My MIL tried Zucchini Crisp, recipe just from Pinterest. They said it was delicious and if they didn’t know it was Zucchini, they’d swear it was apple crisp. Bet it would work well with your cranberries or rhubarb added too!

I make sloppy joes sometimes with very finely grated zucchini. And I've made a casserole with zucchini, corn and onions. You make a very light sauce with milk, eggs and a bit of flour (like an uncooked bechamel) and roast it in the oven all together. Top with bread crumbs. It's super good.

It's that time of year when I throw zucchini in everything. Shred it fine and you can sneak it into anything. 😊
I add a cup of shredded zucchini to any recipe that calls for veggies. I also add a cup or so to my homemade waffles & serve with applesauce for dipping sauce. Yum❣️

We always save the butter wrappers for buttering pans and such. Kept them in the fridge folded in the butter box.
I've never thought about this but I'm going to start. Butter is so expensive and this helps not to waste.

Process it in rings, bread, and freeze for later use. Also cut into french fries, bread and freeze for delicious french fries.
This year I only grew Tromboncino squash on a trellis because I wanted to cram as many other things into my small garden space as possible. And for the first time in over 20 years gardening here I have been fighting squash bugs the whole season and have only managed to grow 4 squash. In fairness, they are 3' long but not as easy to use as those daily zucchini's your get from other plants. Hubby won't eat anything made with zucchini no matter how I try to disguise it, he says he can taste it. ::shrug:: It is so nice that you have your mom's loaf pans to use. I bet the bake sale was a great success...those cakes and cake slices looked very appetizing!
I have squash bugs destroy my zucchini plants every year 😢 I tried growing acorn squash this year and they ate those plants up too!

I slice zucchini in half lengthwise, spread a little butter on, sprinkle with seasoned salt and bake for about 20 min. at 359. Top with sharp cheddar cheese and put back in the oven for 5-ish minutes. We love it that way.

The stovetop casserole was our least favorite of all the recipes. Joe and I loved the zucchini rice hot dish and the cake was incredible.
Zucchini bread is the best!

My family loves fried zucchini. I just slice them into rounds, dip them in an egg and milk wash, then coat them in Italian bread crumbs. Shallow pan fry them in olive oil...so good!

I approve of the savory applications! I throw shredded or diced zucchini in literally everything: spaghetti sauce, sloppy joes, rice, stew, soup, stir fries, fajitas, you name it. They take on the flavor of your dish. Whatever you’re making just throw it in 😂
Blueberries are really nice in zucchini bread if you run out of cranberries
My kids loved zucchini bread. We baked a lot.
Many facilities did that. In NYS our facilities - especially devlopemental centers made their own bread, own laundry facilities, grew veggies and fruits. I do not think they had beef, pork, chicken animals
Zucchini fritters are good and a good way to use zucchini from the garden. I add grated Parmesan and Italian bread crumbs to the mixture, then fry them. I dip them in marinara sauce for eating.

we love to have zucchini sliced and crumbed.and lightly fried in olive oil. Whenever I cook crumbed chicken I do crumbed zucchini as well. It is a favorit of ours. Sometimes we add garlic powder to the flower,.Well worth a try and is good for the biger ones

I would eat every one of these. I love zucchini. My favorite way to eat is cut into cubes, salt, pepper, and coat in olive oil and roast in oven. It has a sweet delicious flavor.
I make chumb bault fry zucchini and onions then add potatoes green beans garlic then can of tomatoes and tomatoe sauce any spices u like cook all together until potatoes are done ur family will love it when I make it I make a big pot and it doesn't last long

My friend canned zucchini pineapple. You can use it in recipes calling for chunk or crushed Pineapple. My friend even made Pineapple Upside-down cake with it. I'm sure you can Google a recipe.
I'm amazed at how zucchini can take on the flavor of fruit. And it's healthy.
Jennifer, I have made the zucchini with stuffing casserole many times. It was a favorite recipe. Leftover casserole is good for breakfast.
Frozen grated zucchini is good to have on hand for later. I have made zucchini relish many years. It is a sweet relish......wonderful in potato salad.
Zucchini cranberry bread sounds very good.
I froze my shredded zucchini in 2 cup servings for zucchini bread. The relish sounds very interesting. It's such a versatile vegetable.

Ive recently started making zucchini fritters, i got the recipe from a channel out of Canada, secret is lots of cheese i love the pineapple zucchini in the ball blue book too, i want to try your recipe with the stove stop stuffing,

Last season I found and made a zucchini casserole many times….. it was similar to the one you made….. it called for the cream of chicken soup mix, sour cream, and diced pre cooked chicken, diced zucchini, and you used the stuffing mix coated with the melted butter…. Half in the mixture and the other half over the top….. we loved it…. Lol this is off the top of my head, so don’t quote my recipe ….. but since we have the protein added inside, we eat it as the main course, and add salad or another veggie…..

I saw someone else on YT make jelly using zucchini and jello, the zucchini takes on the fruit flavor of the jello. Sorry I don't remember details, sure a Google search would find it.
I saw that, too. It was the Moss family.
Our favorite way to eat zucchini is breaded and deep fried…not healthy at all but so delicious…slice into thin rounds or sticks…dredge in seasoned flour, then egg, then in a mixture of flour corn starch parm cheese seasonsalt and pepper/ fry in hot oil till golden/ turn over after first side is browned…so good
I also found a recipe for snickerdoodle zucchini bread it was yummy too

I’ve never made zucchini bread, I don’t know why it’s not appealed until now because carrot cake is fantastic so why would zucchini bread be. 😂 It’s a must bake now in the next week, your zucchini bakes always look fabulous.

I love zucchini. If I get any I put it in everything. My garden this year has been very sad I had to plant 3 times..nothing would grow ...I still have not had one zucchini out of my garden. Thankfully my cousin has been sharing hers!
