- Soup and a Sandwich! I love this soup with chickpeas, but you can make it with dry kidney or cannellini beans. You can also add some ditalini or broken spaghetti in the last 10 minutes to give it more substance. Add an Italian style sandwich, and you have a perfect weekend lunch or dinner. I love watching u cook. U r my favorite chef and I have been watching cooking shows starting with The Galloping Gourmet back in the 1970’s. Even when u cook with ingredients I don’t like, I watch for technique. Your demeanor is so calm and soothing. Love the fact that nothing ruffles your feathers. Your calmness reminds me of Julia Child. I pray that you and your lovely family stay safe. I am a big fan.

I’ve got to say, this soup and sandwich was one of the best meals I’ve made and had. I cook a lot and have made many, many good meals. BUT, there is something about that sandwich with the basil and homemade tomato sauce that was next level. The soup was great (used my own base) and paired with the sandwich, man-oh-man was it good! My wife was speechless, she just ate!

My daughter is coming visiting today from Santa Cruz where she is in her third year at the University. We Will make this soup and she can take back (in my large soup pot) to her starving roommates! They will love how healthy it is and hopefully will make it again. And burrrr it has been chilly even here in California 😉
