    Regarding the brewing:
    The yeast is a living organism that is responsible for the fermentation process. It is essential to keep it alive, in order to make batches of beer. Usually, small portions are made gradually, so fresh beer is always available, but in case of a dead yeast three things happen:
    1. The beer still may be made if some of the yeast is alive, but tastes awfully and can lead to stomach issues (as if you are eating rotten food);
    2. In case of a dead yeast, the brewer needs to make sure none of the old yeast mixes with the new, out of fear of contamination and destroying the new yeast as well. And, if you have seen how big these things are, you know it is a nightmare to clean them to a point that there are no microorganisms left (and how hard it is to clean something that has sludged for years).
    3. If the yeast is fully dead and unusable and the new is bought and set, it needs time to adjust to the specific environment (unique for each brewery, hence the nuances in flavour), and that is before brewing can start. With no beer and no yeast it can take a month and a half to make a new batch of beer, which is enough for the brewery to go under. The brewer basically destroyed the business of this prick.

      Also, yeast can change flavor depending on the environment of the brewer (which is why new one needs to adjust, like humans look different around the world, yeast is different in every brewery, that's evolution folks). So if you get "new" yeast, your beer is gonna taste different. It's the same with bread made with living yeast, the taste can be wildly different depending on your yeast. You can feed it different ingredients and keep it in different environments (humidity, lighting, temperature), that's all gonna influence the taste and the reproduction rate. Like norwegian salmon doesn't taste the same as canadian salmon, or wild reindeer doesn't taste the same as a breading reindeer. The same applies to yeast.

    • @DavidBurnham
      @DavidBurnham Před 3 lety +79

      Also 1) For most breweries to order a new batch of yeast is like buying new cables for every youtube video you make. Usually a totally unneeded expense that would take the base cost of the beer from pennies a glass to dimes a glass. (aka cutting into the profit margin greatly) 2) Each strain of yeast has it's own flavor. A new batch from a vandor would have slightly different flavors and the regulars will notice. and 3) the specific strain of yeast being used is VERY temperamental.

    For why replacing the yeast is tricky/not possible:
    -Expensive
    -Needs a lot of time to first ferment the yeast alone, then to brew again
    -Will probably not taste the same way that the brew did before, making it a pain in the butt to market to the people that usually drank your beer
    -If he has no idea what to do with the yeast, it'd just die again, rinse and repeat

    when I heard what the PTA did at the other person's school, it reminded me of what they did at my old school, its a short story but still gets me angry.
    so at my old school a lot of kids (mostly girls) would do gymnastics on the field, it wasn't anything crazy but they did things like handstands, cartwheels, and other simple things. One person accidentally stood too close and got kicked in the arm, it wasn't that bad and was only a slight bruise, but the PTA demanded we would be punished for doing any gymnastics from then on. All the kids (including myself) thought the could have just made rules like "no standing near someone doing gymnastics", or, "everybody stay five feet apart while doing gymnastics". But they decided to ban it and would have anyone who dared to a handstand or cartwheel gets recess taken away for the rest of the day. I think the kid who was kicked was one of the crybabies and cried to his parent (in the PTA) about being kicked in the arm and getting a small bruise and some scuff marks. That one kid's anger ruined a lot of other kids' recess and made school even more miserable.

    For the yeast question: Yeast doesn't just ferment the wart, it also adds flavors and can be very specific. So by killing the yeast that they had been using it he killed any special flavor or property that their house beers would have had over the other pubs in the area, it could have been super old as well. They certainly could by lab-grown yeast but it would not have the exact same flavors or properties and they would have had to do many iterations trying many different strains to get it close, probably losing customers the whole time.

    Having a unique colony of yeast is about as important as having a unique breeding line of prized horses. If your breeding line goes down then you've lost the product you've been working on for, in some cases, entire generations.
    Yes, you can get new ones, and yeast is quicker to start working with than horses, but nothing will get back the lost bloodline. Killing the yeast literally kills an entire type of beer, and you'd need to work to try and recreate the taste (if that's even possible at all)

    I had the exact opposite happen to me regarding tips and food. Had some friends who came from out of state to visit me. they'd insist on pricey restaurants, have mixed drinks and then expected me to pay for their bill since they were "honored guests". These friends had much more money than me, had known i was trying to save up money since i was unemployed and can't work a day job currently, so the limited funds i had were from unemployment and previous side gigs i did with my art skills. the receipt was always higher than $100 dollars, and they would joke about how much of a good tipper i was, even when i explained how shit food service is in restaurants in the US...
    either way, they wanted me to front 145 bill with a tip and ended up going 160 the first time. I brought up how I didn't want to ruin the mood later and one of them told me to "live a little" after the fact. few months went by and they visited again and they decided to go to a really cheap place, but they made up for food prices by drinking double the amount of booze. This time I had taken money out as my limit i was going to spend during their visit. I bought a bigger meal, and planned on saving half it for supper. they tried to get me to drink, and i told them I couldn't. they mocked me, trying to call me a milk drinker and tea totter, in the tone of Skyrim and fable VA's, later on flat out trying to guilt-trip me by saying i was "ruining the mood" and being a "stuck in the mud"
    I explain to them that I'm intolerant, and they mock me with "yeah intolerant of fun!" Then I just broke down in tears. the waitress notices me,and asks if anything is alright? and i look up at her and smile saying "I'm crying because my friends just remembered today was my birthday" (that's a local cue for an uncomfortable situation) and at first the waitress eyes my friends who are in shock, and then looks at me and nods and asks "would you like cake?"
    and i tell her "no thanks." (which means "don't call 911") and then asked me if I was interested in icecream instead. and i said "Yes please." (stating that i did want to be excused from the table)
    the whole time those "friends" are eating their meal and are mocking me for not taking the "free cake" for my "birthday", another one innocently commented on how I lied about my birthdate to him, and the others were quiet, just enjoying their meal.
    so I got up and excused myself to the bathroom and the waitress went behind the counter, She read the room and saw that my friends were acting out of turn with me, almost abusive and called up the manager about what to do, after that she went into the bathroom and tried talking to me more, but i wa hyperventilating at that point, and just barely got out the words "in panic attack"
    so she coached me into squatting into a pseudo fetal pose and taking deeeep breaths, after that, i calmed down enough to tell her that they're pressuring me to drink, and won't accept that I have alcohol intolerance and that drinking gets me physically ill. She asked if I wanted an uber, and I agreed and thanked her. I handed her my money and said that anything left over was her tip. (easily a 50$ tip) but she handed it back, an told me to hold on to it. she asked more about my friends,and i told her about the usually billing situation,and how they often would pressure me into drinking, even though i would repeatedly bring up I don't like to. she told me wait in a bathroom stall.
    little did i know that the manager had come in, and found my table,and asked my friends if they were enjoying themselves. they told him they were enjoying the food, but weren't a fan of the food,yet still thought I was wasting so they ate it while i was away. one of them commented that I probably bailed on them, and was going to flag me down on PayPal for my part of the bill, another one said that they were going to" stop com'n to visit me if i didn't loosen up and enjoy myself".
    so the manager sat down and asked them to explain further, so the friend explained that I never had a mixed drink while eating out with them, but had spiked drinks at home, and the manager pointed out that maybe it was less about being a "stick in the mud" and more about me being cautious with the amount of alcohol in my drinks. that for some people a tablespoon of malt beer and a tablespoon of hard cider can be completely different things. Our waitress comes back to the table and greets her manager, then he confesses that he'd been called to the store about a complaint made, and he wanted to see them personally to gauge whether or not the cops had to be involved. the waitress whispers to him and he tells them he isn't going to call the cops, and since i hadn't eaten my food that it would be waived from the bill. she put down the bill, and the manager looked at it tsking as he did so.
    "did you buy all this alcohol? about 100 dollars work of booze and you expected someone who's shy about drinking to trust you? You bought appetizers that wouldn't soak all that booze up, meals you half-finished and I'm to expect you going to drive a minor back home? No, not on my watch, or at my restaurant. I'm going to ask you folk sits here for at least another hour for the booze to finally leave your system, and your friend is going to get a uber back home..I'd pay for to be ubered home but, you're out of state... and you trash-talked my chef's cooking."
    after that the waitress escorted me to the back of the restaurant, were an uber picked me up and she handed me a take out container, which had the meal i ordered in it. The uber driver, kept telling me how "Fing Delish" it smelled. They haven't talked to me since the situation,but mutual friends have told me that they threw up all over the bathrooms,and ended up getting escorted out. I went to that place again recently and gave the same waitress the money from last time,as well as my bill for the food. with a note saying "for my heroes,and for my supper"

    I really thought the story about Dee would be different, such as, she'd get a DUI on the way home, or her daddy would be notified that she was skipping out on restaurant bills (hopefully by the police!), or similar, however the prank was a good one. It DOES make me wonder why the others in the group never asked Dee to cough up what she owed though.

The amount of time, work, balance, and stress that goes in to serving a table like that is immense and the only reason to do it is for the tip, since the server could have been serving several smaller tables in that time.

    Yeast, like grain, has specific types. You have yeast for bread and yeast for alcohol. Each strain of yeast for those two categories differ greatly. For beer, you need a specific strain that helps with the time needed to ferment and how much fermentation occurs. To strong, it ferments faster but you get a bad taste. Too weak, and it ferments slower but you usually end up with a rotten taste. It needs to ferment at a specific speed and to a specific level for it to be considered, by today standards, beer.

    Depending on the yeast, killing it off can vary from mildly inconvenient to straight up closing the place down. While most breweries will use standard strains of yeast, other breweries will use their own specific strains, think of it like a thorough bred horse, set out to stud so it’s offspring are great horses. So you have a race horse who wins every race (or makes great beer) and he straight up shot it in the face. Sure you can go and get another horse...but where will you get a horse that wins consistently...

    I don't know anything about brewing, but I do know about breadmaking. My chef at my school had a yeast starter for 18 YEARS. It accounted for a lot of flavor in our sour doughs. Making starters takes time, especially of the size we had (2ish gallons, it was just for flavor). The yeast starter at my school was older than some of my classmates. She had a name, Dixie. And since brewing actually requires the fresh, already active yeast and it's not just a flavor agent like it was at my school, I can imagine there was ALOT of very dead yeast.
