- Steak Oscar is all about indulgence. So much indulgence that it left Chef Tom speechless! Watch as he creates a perfect crust on steak using the cast iron griddle on the Yoder Smokers YS640s pellet grill. Then he browns some crab cakes before topping with a rich and creamy Hollandaise sauce. We told you it was indulgent! This recipe is so rich in flavor that Tom ran out of words while describing it!

I love the flavor of the Blackening seasoning, but have shied away from using it because it likes to stick to itself and the pan more than the meat…especially tuna. What’s the deal? Not enough oil? Too hot? I almost exclusively use seasoned cast iron.

Holy S***! I gotta try this! I normally do a smoked reverse sear on my beef...but I think that would overpower the crab and sauce. What say you?
You may have a little more smoke in the beef from a reverse sear, but I don't think it would be enough to overpower the other ingredients. However, people differ in the amount of smoke they want to put up with. Go with what you think is best. Treat every recipe, even our recipes, like it is your own.
I love Steak Oscar but to be honest, it's way better with bearnaise sauce 😊
