I would assume that the wolves in his dream are most likely shen’s wolves due to him still having suppressed memories of what happened as a baby

Hear me out-
I noticed some goofy character traits of the villains, starting with Tai Lung, when Shifu sees the scroll is blank, he closes it, opened it, tilts it side ways, and does it again. Tai Lung does the exact same thing after he fights Po. Lord Shen, though in a maniacal way, uses sarcasm from time to time. Most notably when he says, "Oh it's a gift, for your party." And when, however annoyed, the future teller bites his coat he doesn't have her executed (of course it could be just so he could prove her wrong like he said) and Kai- not enough patience to right out all of the jokes and goofy faces he makes. Adds a lot of character to the characters.

I thought that they were well known and famous since Po is a huge fan of Kung Fu and knows a lot of history and people. Like when he was first entered to the Jade Palace, he was gushing over the weapons, items, etc along with the Furious Five character traits. He knew about Tai Lung and he knew wasn't a good person, but didn't know how or why he became evil.
So he probably knew about them and dream about fighting them and also dream that he was the Dragon Warrior (before Oogway chose him).
