Easy Braised Pork Trotters | Pig Trotters Singapore 红烧 卤猪脚 : 简单 易做

    There is another version I made using pressure cooker. This time I use a pot cook on stove instead. The time needed will varies with the thickness of the skin/meat/etc. However, generally, it takes an hour at least. If you prefer the skin with a little chew, you will need to check by 50 minutes by poking the skin, if it gives you a little resistence, it is ready. If you prefer softer skin, it may take up to an hour half so you should check it by around an hour 15 minutes - the chopstick should poke in the skin with little to almost no resistence. If you wan a fall off the bones texture, then it might take up to 2 hours - at an hour half, you will need to pick one piece up and the meat should look like it is falling off. Take note that it doesn’t taste too good if the meat is too soft.
    For the spices, you may opt to use more star anise or cloves depending on your own preference, I prefer not to overpower the braise meat with strong spices so I usually use less cloves and star anise. Bay leaves and cinnamon are usually the more accepted fragrance by most people so I usually not too worried about the size of the leaves or the size of cinnamon bark.

    香料我都是用较保守的, 因为我并不喜欢香料味盖过肉的香味。八角和丁香味较重,我都是只用一粒, 味道就够了。 香叶和肉桂是大多人能接受的, 所以我不太担心太大片。

    Thank you for sharing. Are you familiar with the braised pig trotter recipe that uses red fermented bean curd? It is another Southern Chinese dish. If so, can you show how to make it? Sometimes tofu skin is stewed in it as well.

      The recipe here does not add in the fermented bean curd usually. However, we do add in egg, tofu and tofu skin, even tofu puffs.

      Thanks for trying it out.. This type of dish usually are sweeter in taste in Singapore.. There r also other factors to consider.. Hopefully u like the flavour and adjust the seasoning to ur preference next time😁

    Yeserday i was in our local grocerystore and ask the butcher can i get porktrotters ??.
    He yes sure, 1.5 kg u must pay ca 3 € ,and pork tails 1.5 kg ca 2.50 €.
    Verry cheap

      In singapore, pork trotter abt sgs 7.50 per kg.. Cheaper cut.. taste really good..

    for how long did you cook there pork trotters the at the start of the video?

      Boil the Trotter till u dun see any blood oozing out of the bone. Cause different cut size and sometimes there are more blood in the bone.. Can't set a specific time.

      Medium high.. I used heavy base pot.. If u use claypot or thin base pot, u will need to use medium heat..

      Covered until boils then i would not cover fully n simmer. Uncovered for the later half so the liquid reduces.

      不要放猪肉。。换成素肉,香菇或是鸡蛋。。 但味道不会有猪味。。味道不会太差。。我有时会卤香菇豆腐皮之类。。豆干。。

      Vegan shd be the same except the pork.. U may replace it with mock meat, shitake mushroom, tofu..basically u won't get the porky smell.. But the braising gravy will not be too far.. Sometimes i braise mushroom only.. It works too..

      Yes.. Slow cooker also quite nice.. U need to add more water and also to turn the meat from the bottom to the top ard 30 minutes so the meat is tender evenly, stirring occasionally to prevent burnt.
