The Fake Vinegar In British Fish and Chip Shops

  • "Non-brewed condiment" is what they call it: it's chemically very similar to proper vinegar, a mixture of ethanoic acid, colourings and flavourings, but it's put together by just combining simple chemicals rather than brewing. Hardly anyone knows, and those that do know don't generally care; so here's my question. Does it matter?

      @@occamraiser I think generally the case with natural vs synthetic foods is that the natural has other molecules other than say the vanillin in vanilla which gives it a deeper flavour than the synthetic which is just one molecule.

    The funny thing is that retail the customers have been demanding higher "quality" vinegar at a higher price. Wine vinegar, cider vinegar, balsamic vinegar.
    If the fish and chip shop was honest and offered the real stuff I think many people would consider the shop as "premium" and would be prepared to pay more for the product.
    We have had such things where the shops have sold baked fish rather than fried. And they do fine commercially.

      You'll find that the mentioned vinegar about are all gluten free and replacements for Malt vinegars. Malt vinegar is cheap and nasty, and also poisonous to a lot of people.

      Or maybe not. I once heard a story about a sausage manufacturer that decided to increase the percentage of meat in its sausages, and many customers then complained that they did not taste anymore like they used to.

      @@RobotronSage the preferred IUPAC name may be acetic acid, most probably because of convention, but the systematic name IS ethanoic acid. It's not the wrong you're just not used to it. The systematic name follows the agreed upon nomenclature rules and hopefully you would at the very least be able to draw a model of the molecule, if you were a chemistry student (usually when you might actually be asked to do this) or professional and somehow never encountered the acid made when vinegar is brewed.

    A couple years back I swore I had some kind of reaction to the batter mix the chip shop was using, this makes sense of that situation they just didn't water down their "vinegar" enough and I got burnt.

      The bottles for that stuff actually have the "melting hand" symbol on them to warn about it's highly corrosive nature unless watered down considerably.

    I remember years ago, here in the states, Arthur Treacher's Fish and Chips chain actually used real Malt Vinegar.
    Although I can't say if vinegar in little plastic packets is still authentic but US food and labeling laws require it to be what the label says it is.
    That was the only place I ever remember using real Malt Vinegar.

      The little packets in the US are labeled malt vinegar and they certainly are. Laws on both the federal and state level outlaw imitation vinegar here, except in a few rare cases where it can be a minor ingredient in another food product.

      @@revolver265 Now that I think about it, it is interesting that maple syrup is something only Canadians consume on the reg. I am Canadian and I use maple syrup everyday, so the pancake syrup in American breakfast joints tastes very odd, I would compare it to sugared medicine haha.

    Yes it matters, like the difference between real ale and keg. The Sarson’s vinegar brewery used to be next to the approach tracks to London Bridge station. Building is now industrial chic apartments.

      My girlfriend's mum did exactly the same, and tracked down a shop selling non-brewed condiment. On a recent visit to Dumfries I found a chip shop that had bottles of it for sale too.

    This video almost makes me cry. I remember when this came out, me and my friends were watching it at school, and watching it we all decided to go and get fish and chips afterwards. The very same night it was announced that the school was closing. We all ended up falling out of touch, and the last memory I have of that old friendship group, was eating fish and chips because a Tom Scott video makes us hungry. How I wish for those days back

      It's a fatty, slightly acidic/salty condiment that is really good for dipping things in (in my personal opinion)
      But you also have to get a mayo you like cause some are too acidic, some can be too sweet or too salty

      poudink is correct. You can get vinegar in almost every fast food place and nearly every restaurant. You'd be hard pressed to find a place that has french fries and not vinegar in Canada. I didn't know this wasn't universal.

      In Canada it's extremely common to put gravy on fries. I was in Florida once and at an A&W in a mall I ordered a side of fries, and a side of gravy. That was the entire order. The lady behind the counter looked at me and asked me in all seriousness what the gravy was for.

    Fish and chips when I was a boy were absolutely delicious with salt and vinegar. These days it tastes like they’ve put some kind of water on them. I ended up carrying a bottle of Sarson’s in my car boot for such occasions hoping that it wouldn’t break.

    As a person who's parents owned a fish n chip shop (in Australia) I'd like to say that I think a BIGGER issue is false advertising of certain species of fish. Here in Australia it was legal to sell Hake that was advertised as "Snappa". Anyone who knows fish will agree that Hake is very cheap and less quality than "Snapper". BUT as long as it's not spelled correctly, it's not considered false advertising.

      It just hit me. Just because cleaning vinegar is only 6%, compared to regular vinegar being 5%, you still shouldn't drink it straight.
      Going from 5 to 6 might not sound like much, but it's actually an additional 20% in strength.
      They do make up to a 30% vinegar, but it's used as a weed killer mainly.
      And there's a 75% that's industrial only, used for cleaning heavy grease and the like.

    I often wondered why I couldn't get the same taste on home made chips and then I read an article a while ago....Non brewed condiment gives the same flavour as the fish and chip shops 'vinegar'.... It doesn't give the burning sensation in our throats either - unlike brewed vinegar. Brewed vinegar also seems to give us hiccups too.. I love the non brewed condiment, it's the only one that I buy now, we all love it and prefer it to regular vinegar x

    A few years ago, I noticed the vinegar in fish and chip shops changed. It tasted more flat. So much so that I stopped using the in store vinegar, so maybe it matters I dunno.

    I don't know about today, but when I ran my own chippy the cost differential between brewed and non brewed wasn't worth the effort even when buying several *gallons* every week. In fact I used to buy half pickling vinegar and half ordinary brewed vinegar and mix them for extra flavour.

    "Ethanoic acid" is the primary component of vinegar. It's what you get when you buy distilled vinegar for cleaning and such. I see no issue with this if we have all sorts of false fruit flavorings that are nowhere close to nature.

    Being German I knew that the British put vinegar on their chips but i've never tried that. Actually, up until this video i've never even seen anyone do it - it's somehow odd and fascinating at the same time to me. :D
    When I think about it: It's even weirder that we have crisps with salt and vinegar flavour in every supermarket but on chips it's just not a thing here. :D

      that was probably something that came from England in the 2000s. Here in denmark, salt and vinegar crisps wasnt a thing until about then, and it came from England.

    In Germany you don't really make any difference between vinegar ("Essig") and acetic acid ("Essigsäure"). But Germans usually put ketchup or mayonaise on their chips.

    As a Russian - maybe I don't know much (and it's true, never really had fish & chips), but over here there is no malt vinegar, only apple & grape ones. So now I'm kinda interested how is the process of making vinegar different for malt, apples and grapes so that the finished product isn't ale/beer, cider or wine.

    I'm pedantic enough that it does matter to me. If I ask for vinegar, and if they're saying "vinegar" I expect it to be vinegar.
    Not that I *ask* for vinegar, I don't like the stuff. But it's suddenly making me worry about the "Homemade Vinegar" my local Italian chipper sells in bottles. Are Irish chippers full of this stuff, too?

      It's highly likely that they are just making it up from concentrate. People really like Chipper vinegar... actual Vinegar you buy in shops doesn't taste the same so they've got a little market there.
      It's an easy profit for them.

    I had no clue places had something different than actual malt vinegar. I have never been to a genuine fish and chips place before, but in the US every place that has malt vinegar has the Heinz malt vinegar and its the best malt vinegar I have had. Ive tasted a few other off brand ones and nothing compares to Heinz

      You can buy onion vinegar from your local supermarket, I use it in combination with regular brown vinegar on my fish and chips

    I know this video is 5 years old, but as it's been recommended to me now, I feel like I can still comment. This is exactly why I order my chips with salt only and put a nice malt vinegar on them at home. Also, this keeps them more crispy as they don't get soggy on the way home.

      This tastes way better on chips and I buy it from the chippy every now and then. Malt vinegar is too strong. Chippy vinegar makes it. If I go somewhere and they have normal vinegar they’re not a real chippy
