Southwest Chicken Bowl Healthy Griddle Recipe!

- This Southwest chicken bowl is a healthy griddle recipe to make when you need a break from the normal griddle dinners. This chicken on the griddle starts with a Southwest Chipotle marinade that’s made with chipotles in adobo, orange juice, lime juice, and Mexican spices. Cook the griddle chicken breasts and add them to a rice bowl or a salad for a healthy dinner.
And don’t forget the quick and easy avocado lime ranch dressing. The creaminess of the dressing pairs perfectly with the spiciness of the chicken.
Or, turn the griddle chicken into fajitas or quesadillas!

That's a perfect plate right there! You, like me, use the Chef Jean-Pierre Microplane method. I would have definitely thrown some orange zest into that marinade as well. I've come to love caramelized corn on the griddle, always delicious. The final chicken looks like it's perfectly blackened, and your finishing avocado ranch looks awesome. Definitely a ton of flavor for a healthy meal! Oh... I hope Amy had a wonderful Mother's Day! ❤

The dressing was the key...really helped with the heat from the Chipotle
Good clean eating that looks fantastic! Can’t go wrong with those fresh ingredients. Adobo, cilantro, and lime together are definitely my favorites when marinating chicken and pork for a good south of the border cook.

He shoots, he scores! Looks amazing top to bottom. This will be on my upcoming meal plan. I made your fajitas last week, and it was very flavorful. I was going to use the same marinade with chicken but I may try this recipe first.
Maybe a combination...just be careful how long you marinate...could cook the chicken

Excellent! Another feature of a preparation like this is the juxtaposition of the warm elements to the cold ones, just yummy. BTW, ironically we did the calamari Ceasar salad I've mentioned to you before for tonight's dinner, similar in the presentation though very different flavor profile.
Now, we know Ms. Amy is a wimp about spicy heat..............what's up with all the jalapeno and chipotle adobo (which is just right in my book)..............is she finally coming around?😜
I think the dressing with cotija cheese just balanced it out so well...she did think the chicken was spicy but when eaten together....just worked out...I have been trying to push balance with her....its coming around...I will txt you in a few days...
This recipe was a hit with the wife. I used frozen sweet corn instead of canned and grilled it up with Tajín sprinkled on top. Absolutely perfect.

I’d have to omit or substitute the corn and a couple ingredients. But NO DOUBT she would absolutely crush this for her lunch or dinner ✊🏼🧐! Looking good , for me personally I would use a yellow habanero sans the seeds it's the miledest of habaneros , good flavor but not so hot . Either way good stuff indeed , griddle on !
