If you ever have the occasion to order it online, try making aligot again with the cheese we use in France. It's called "Tome fraîche" and is produced in the city of Laguiole (the very same city you already know for the world renown cutlery) in the region of Aubrac, France.
This cheese (and the addition of garlic) will elevate this fantastic side dish to peaks you can't imagine.
