  • Mango Mousse Cake
    Ingredients:
    - Vanilla Sponge:
    - 100 ml milk
    - 1/2 tsp vinegar
    - 80 gms sugar
    - 35 ml oil
    - 1 tbsp curd
    - 80 gms flour
    - 1 tsp baking powder
    - 1/2 tsp baking soda
    - Mango Mousse:
    - 100 gms whipping cream
    - 100 gms white chocolate
    - 50 gms cream
    - 1/2 cup mango puree
    Method:
    1. Preheat the oven
    and line a 7-inch tin with parchment paper.
    2. In a bowl, add milk and vinegar and let it sit for a few minutes.
    3. Add oil, sugar, and curd to the same bowl and whisk until everything is well combined.
    4. Sift in the dry ingredients - flour, baking powder, and baking soda. Mix everything well to make a smooth batter.
    5. Transfer the batter to the lined parchment paper and bake it in the oven at 160 degrees Celsius for 20 minutes.
    6. Once the Vanilla Sponge is baked, let it cool down completely.
    7. To make the mango mousse, prepare a white chocolate ganache by mixing melted chocolate and warm cream.
    8. In another bowl, whip the cream to medium peaks and mix it with the ganache to make the mousse.
    9. Pipe the mousse in the same ring as the Vanilla Sponge, level it with a palette knife, and chill it in the fridge overnight.
    10. Decorate the cake with mango puree and surprise your mother on Mother’s Day!
