Hangar steak is the greatest thing. I've not had it for a few years now, and I miss it. Probably the only steak I'll have very rare - the flavour you get from it cuts through, and it's tender but still has texture and bite. Amazing.
Roel - you with your Capaccio is like me eating slithers from my South African Biltong when I make it - I use around 200 kg a week of silverside so get loads of thin bits when preparing it all. My Mrs hates me eating it raw but hey its good when I sprinkle all my spices on it. I'm in the UK and have 5 webers. " smokers and 3 kettles. Best video you ever made mate! I love raw meat and mushrooms cooked anyway there is, but my girl can't stand either. I literally chased her around the kitchen with a shrimp one day, then tagged her again with a strip of raw steak. I sneak mushrooms into her food sometimes, minced so finely she doesn't spot them and she always loves it but wouldn't touch a whole shroom to save her life. Keep up the great work!

Hey Roel, I really really like your video's but I think you are completely wrong about seasoning your steak afterwards, you need to season your steak up front with fine salt and and afterwards with Fleur de sel. I am a chef and we once did an experiment at my work and the steak that was seasoned up front and afterwards tasted wayyy better

Ideal for using on a woodfire of BBQ though, those things can take some heat. :)

Just tell your butcher you want to eat your meat raw (for carpaccio). He will tell if you can or not.
