Hanger steak is awesome probably one of the best steaks I have grilled. Got it from a butcher shop. Made Fajitas to perfection. Best ever.

Learned about hanger steak years ago from my step dad. We use it to make Ranchera for Carne Asada. Marinated in lime juice, oranges, onions and garlic. Toasted white corn tortillas, queso Fresca with a spicy avocado salsa. Best Carne Asada this side of the border by a mile. We usually cook 5 to 15 lbs at a time.

The secret ingredient is a nice, juicy fly. Sitting right on top of the cut. Make sure you add the fly before your kosher salt.
