  • What are the things you need in order to set up a kitchen where you can cook Bengali food? Join us for a three-part series where we walk you through the various nuts and bolts (however little!) that keep a kitchen running like a piece of well-oiled machinery. This video (Part 1) focuses on the Bengali pantry.
    We have divided our Bengali pantry essentials into three broad categories based on priority, starting from the very basics to more specialised items for advanced cooks. Even though we've approached this from the perspective of a Bengali kitchen, this list could very easily be adapted for Indian cooking in general.

    ভাই ইনসিয়া ও সপ্তর্ষি, তোমাদের রান্না এবং সেই রান্না কে অন্তর্জালের আন্তরিকতায় এমন অনন্য শৈলী তে পরিবেশন করা টা ঠিক যত টা মনকাড়া আর সৃজনশীল, তোমরাও কিন্তু ঠিক তত টাই মনের মতো আর মিষ্টি ! আমি গত ৮ বছর ধরে মার্কিন মুলুকের বাসিন্দা। আমাদের ছোট পরিবারে 'হাম দো অর হামারে এক'। আমার মেয়ে 12th গ্রেড এ পড়ে, এ' বছর কলেজ যাবে, এবং তোমাদের চ্যানেল এর একনিষ্ঠ ভক্ত। তবে ভক্তি তে কিন্তু ওর বাবা মা'ও পিছিয়ে নেই :) এ মুলুকে তো আমি'ই 'পারুলের মা' আর আমি'ই 'মালতী মাসি'; তাই এক সময়ের শখ মিটিয়ে নানান রান্না করা টা কখন যে শুধু 'পেট ভরানো'র' তাগিদ এবং মাঝে সাঝে বন্ধু বান্ধব দের জন্য পার্টি তে করা রান্না'র মধ্যে নিজের অস্তিত্ব কে গুটিয়ে নেয়, সেটা বুঝে ওঠা যায় না। তোমাদের এই সব ' জিভে জল, বুকে বল ' আনা রেসিপি গুলো আমাদের মতো অনেক কেই 'আবার রাঁধিবো ফিরে, পাকশালা টির তীরে' ভাবিয়ে ছেড়েছে ! আর তোমাদের "রসে রসে রসে ডুবে" গান টা তো আমরা তিনজনেই মাঝে মধ্যেই গুনগুনিয়ে উঠি :)
    আজকের এই এপিসোড এর আইডিয়া টা অতি চমৎকার ! তাই কি'বোর্ড এ হাত না চালিয়ে পারলাম না ! তোমরা দুজনে খুব ভালো থাকো আর খুব ভালো রাঁধো :)

      The problem is with SYNTHETIC msg , not the natural form of MSG which is present in some veg and milk , as you say .
      Heat expeller pressed oil from vegetables are poison but natural oils from seeds and nuts are natural !

    I am Maharashtrian and I cook more of fast food than regular meals. I am a pure vegetarian. Now I am far away from cooking as I stay in shared accomodation that has common mess. Being worked in the kitchen from my childhood, I see this video as a complete project on its on. They have added subtitles, English and Bangla labels, amazing videography, video examples where ingredients can be used, brilliant classification and every possible detail to the video. You guys are just brilliant. May be some storyteller types who even has awesome skills about video, writting and presentation skills. I don't remember when I was this impressed last time.
    Actually, I have seen your jhal muri video twice that too accidentally and came across this video. Not sure what I am doing here as I don't even want to setup a kitchen but I am impressed.
    Your kitchen will be immortal forever. You guys have what it takes. Genuine people who knows what they are doing and giving their best. Total respect to your efforts. ♥️

    This is exactly what I had been looking for so long. I only found things catered to a western audience, which wasn't very helpful for me. I'm a college student, and living with my dad and brother and oh so tired of eating food cooked by the maid. Thanks so much for the comprehensive series, guys. Much appreciated.

    I live alone in Jharkhand for work now. Have stocked up my pantry with almost all the things you mentioned. People had kinda joked that my pantry is 'too stocked' for someone living alone and cooking just for herself, but this video gave me much-needed validation.

    হ্যা,আলহামদুলিল্লাহ, হয়ত তেমন ঝা চকচকানি নয়,তবে হাতের কাছে দরকারি সবকিছু থাকবে,স্বাস্থ্য সম্মত হবে এমন একটা রান্নাঘর হয়েছে আমার।এখনো তেমন গুছিয়ে উঠা হয়নি,ইন শা আল্লাহ্‌ ধীরেসুস্থে হবে।
    #একজন চিকিৎসক হয়েও আমার পারসোনাল লাইফ আর দশ জনের চেয়ে কিছুটা ভিন্নতর। আমার অবসর কাটে ইউ টিউব দেখে:আর তা হল বিশ্বায়নের এই সময়ে আমার ভালো লাগে গ্লোবাল কিচেন দেখতে!!

    I am Gujurati and married to a maharashtrian. . We run a home concept restaurant in Tbilisi Georgia... I am very impressed with the way the videos guide thru the dish. Very descriptive and detailed.
    I myself am a nutrion graduate and find many tips that are uncommon and those can be shared only by ur elders..
    On the rice gobindobhog rice there is one more can be added that is ambemohar it is a small grained rice but has very delicious flavour good for khichadi kheer and so on

    I think this is one of the best tutorial videos i came across till date..or rather say the simplest and the best video i ever watched. I don't know how people from other parts of the country or who are not Bengalis would react to this video..but being a bengali from Kolkata i feel the video is a repository of knowledge which any young cook or experienced cook would ever need to know.. i would like to share this video with everyone i know and cooks in life..Not only that..if i can i would like to pass on this knowledge to my children for them to set up their kitchen after 30 yrs may be.. thanks a lot for giving this a thought and making it so informative 🎆🎆🎆🎆🎆

      Amazing videos. We have almost everything in our stock now. I was wondering if you guys would possibly suggest some good recipies with the white fishes like cod and mackerel. Or some Bengali version of salmon. I have found big sea bass tastes almost like ilish in a paturi. Please let me know what can be done with these bideshi fishes to turn them deshi.

    Such a lovely and comprehensive video. You covered so much ground!! Just because you asked at the end of your video about what you missed, I came up with the following list:
    In spices:
    - white pepper (shah morich)
    - camphor (karpur)
    - anardana whole/anardana powder
    In nuts and fruits:
    - pistachio (pista)
    In dried herbs:
    - dried curry leaves
    - dried basil
    In pulses/lentils:
    - kidney beans (rajma)
    In cereals:
    - sabu dana
    - oats
    In beverage section:
    - milk powder
    In baking section:
    - yeast
    - powdered sugar
    It was just the outcome of a fun exercise, where I was simply tallying stuff present in my kitchen with your list ;-)

    I love your channel. Everything about it 😍 I am a home cook and I have tried few of your recipes. This is an awesome helpful video for home cooks. I will not say you have missed something but I love to store these as well in my pantry like honey, milk powder, pesta badam, garlic powder, pepper powder, biryani masala, jordar rong, powdered sugar, lachcha shemai etc. In Bangladesh we mostly use Chinigura Rice to cook flavored rices. All these actually depends on someone's cooking preferences. But you covered almost everything we need in a Bengali pantry. I wish you both a very successful journey with this beautiful channel 👍 🎉❤

    I couldnt love you more. Being an avid cooking enthusiast and just recently researching into our Indian cooking, ur channel is one of my most favorite go-to(s). I love the simplicity of ur presentation n those sweet BGMs. Additionally being an Odia i connect more to ur dishes than others.     Methi - both ground and seed form is also very important for several dry veggies. It has similar function as Hing, which makes heavy food easy on stomach.

    You guys are just amazing. I mean being a bengali, food is something we live for and you guys have added a different dimension to the whole cuisine altogether. I have made mishti pulao and mangsho curry with the help of your videos and trust me they were amazing. I wanted to share some pictures but by the time the food is served, we would be so hungry because of the aromas that clicking a picture wouldn't even cross our mind then. Thank you Saptarshi and Insiya for giving us easy and appetising dishes.
    Tomader filter coffee r video ta dekha r por I too bought a coffee filter and we love having filter coffee. Also made the coffee house egg sandwich. Mind blowing it was. 😋

    What a remarquable work!!! I am really impressed and thank you for sharing this with us. I love Indian cuisine but don’t know a lot from bengal cuisine...even if most Indian restaurants in Paris are actually hiring bengal chefs :)
    I will certainly enjoy cooking your recepiez, I have all basics and some expert et ninja item witch makes e proud when I saw it 😅.
