- How to make roti: Rooti, or roti, is a relatively new entrant to the Bengali kitchen. Wheat being a staple in the Northern parts of India, rotis, chapatis, and phulkas are the mainstay. In Bengal because the main crop is paddy, the staple has always been rice. It is only in the last 50 years that Bengalis have started eating rotis. Rotis are more popular as breakfast or dinner. For breakfast, rooti is served mashed with milk and a fruit such as banana (doodh-ruti-kola), or with a torkari. For dinner, ruti is usually served with a protein such as egg or chicken curry, or with a thick dal. Another reason for the popularity of rotis in Bengal is its convenience as tiffin or lunchbox item for school or office. Ruti-torkari is less prone to leakage and fewer items are required to eat roti than rice (at least for Bengalis).

I tried this technique last night and made the most perfect, soft rotis ever! I used 195g boiling water for 200g atta and I was able to incorporate more water during the kneading. The rotis were a breeze to roll out. Thank you as always for using metric. I weighed out 40g dough per roti, very useful for the days you have to count your macros. Love that the dough has zero oil. We ate 8 rotis with dinner and the following day, I microwaved the remaining two to eat with anda bhurji. The rotis remained pillowy soft. Thanks as always 💗

My moms tip is to use the flour as less as possible for dusting purpose as extra flour anyway hardens the roti when it is not hot anymore. For me she makes perfect roti specially the rumali roti 😊

@Shady Queens, the recipe calls for 20g of Atta per roti which will turn into 40g of dough with the addition of water. I have always used 40-50g dough while making rotis and it turns out well every time. A little effort to watch the recipe properly before commenting will be appreciated.

I and my roommates live in Pune as we work for the IT corporate companies, so we make our own Roti's since 2018 and believe me if I say we make some of the best Roti's we have ever had since we were kids. We have to make at least of 30-40 Roti's every day and we are now pros.. 😂😅

@Vipul Rotis are in fact from the wheat belt in the north. That is why I am not sure if I want to watch this video.
When we moved to US we had same problem. Even my mom who is pro at it couldn’t make soft ones. Well turns out how the flour is made is also another aspect of it. Depending on where you live find out what’s the best brand. In US sujata gold is the best one found in Indian grocery stores.

no there is not much significance of hot water because my mother never used hot water i my self dont use hot waterome people who dont get it right they need hot water it depends on kneeding and baking even salt is not needed. high blood pressure people shouldnt put salt to rotis.

I make it with normal water but the dough and still it is soft. Add little oil in the floor.

Followed the recipe exactly but maybe my flour had less gluten and I didn't use salt, therefore there was a lot of water for the flour, after adjusting for consistency and making the dough properly, this was the best roti I have ever made in my entire life. It was extremely soft, round, fluffy and absolutely perfect! My parents, my brother and I loved it so so very much! Thank you so much for such a detailed, scientific, methodologically broken down approach to making rotis! It was perfect!! Thank you so much!

Brilliant.... you’ve unlocked the secret: use bobbling water... but this recipe is too wet, so I now use 150g water to 200g flour.
This gives the rotis a better flavour as it prevents that raw flour doughy taste that cold water rotis have, and no oil is needed.
I followed this for the first time today and they are the best batch I have ever made.

I had never been able to master rootis but your precise measurements helped me learn how roti dough is different from luuchi and paratha. I also had to practice to get the proper thickness but within 3 batches on successive evenings, I was getting perfectly puffed rootis! And truth be told, even the early not-always-puffed roti were still delicious and khub noram!

I tried this recipe and it’s amazing!! I made aloo parathas with this and they puffed up! I’ve never seen stuffed parathas puff up! Best chapati recipe ever!
For someone who has just begun making Chapatis.. I initially learnt it with regular water and oil... They turned of fine but honestly I felt the hot water really makes them softer and I focused on how she rolled the dough .. I tried it and they actually turned out pretty round. I m 15 year old passionate cook, I cook all sorts of dishes. Last time I cooked chicken biryani and my parents liked it but making rooti is something that I learnt myself.
1st try- instead becoming a dough my atta came up to be a complete disaster, it became all batter and mushy.
2nd try- not adding too much water resulted in a completely dry dough which ended up very badly but I soon added some more water this time but my rolling was not perfect.
3rd try- making the dough was very easy for now but the rolling seemed pretty bad I got uneven surfaces and the surface which had more thickness ended up being raw.
4rth try- I guess I somehow learnt to do everything but the rolling was still not perfect but not as horrible as the last three tries.
5th- I watched tutorials on CZcams showing how to perfectly roll a dough and by some magic I could now make circular shaped rooti very perfectly without any problem.
All I can say is making rooti is something you need to experience by doing it, recipes did give me idea but not the experience. Thank you for all your interesting recipes!!!

This method works! I tried it yesterday. I made rooti for the first time. Although the dough was initially slimy as I must have miscalculated the proportion of hot water, the rootis puffed up on tawa and it was super soft and tasty. Thanks a lot!!!

I am a beginner cook. I have tried multiple times to make rotli, but it never came out this soft. Thank you for sharing this video. I didn't use boiling water. I just used the hottest water that runs from my faucet, which runs really hot. The technique you mentioned to make the rotli nice and round really helped. Thank you!!
Guys, I just wanted to share my gratitude. I had never cooked before the lockdown. So in the first few days of lockdown I found myself stranded. I started cooking by looking at videos on CZcams. For the second dish that I cooked was your peyaj diye daal. I am a huge daal fan and pretty hard to impress. I didn't have much expectation from my own daal and was just cooking so I don't starve! However, your recipe was simple and perfect. Reminded me of childhood and maa's daal. Since then I have tried many of your recipes and they have all turned out great.
