I also agree with everything you said. I deeply regret buying the 5 burner LTE and the griddle. They don’t cook evenly and it’s impossible to cook on with all of the cold spots. I also get flare ups like I’ve never seen. Aside from being pretty, these Blaze grills are some of the worst I have seen. I’m at the point that I’m considering ripping apart my outdoor kitchen and granite countertops to get rid of these. Also be warned, when I was planning this out, I asked the folks at BBQ guys if they would recommend a different grill for more money, and they steered me towards the Blaze grill. It turns out that they used to be owned by the same people or they still are. I don’t remember exactly but you can google it. In hindsight I would spend more for better quality. This grills just are not good.
I have the exact problem with my Blaze grill. I put all (4) burners on low and in 15 minutes I am at 400. While I cook the temp keeps rising up to 500. I end up having to turn off (2) burners. i am working with Blaze now to hopefully resolve this issue. Sorry to hear yours is not working properly. Have you called Blaze to see what they say?
I have contacted both Blaze and BBQ guys via online chat and email asking if there are any retro fixes or modes. I received from both basically a simple, "Nope" with no further inquiry from either.

Yes, there seems to be a lot of videos "selling" Blaze grills and such, but very few that are end user comments.
