    Another great video, thx boys. I have steel and ceramic and I can verify both are great. When peeps ask me which to buy, I respond with this: If you are diligent at taking the couple extra steps of maintaining steel (ensuring it has been and remains thoroughly dry and lightly coated with oil after every cook) then go with steel. If the ability to cook non-stick with minimal clean-up is more important, then go with ceramic. They can both cook anything. Steel provides a better sear and ceramic provides better non-stick.

      I'm in the opposite boat... I feel like my ceramic top needs much more TLC/has a fatal flaw when it comes to griddling. I've never used cold-rolled, however, with my ceramic, I got it replaced once already and had sticking issues big time. Did nothing different than these Bois and other PitBoss griddle creators. I'm on my second surface and it is starting to do the same sticking thing as the other surface. Cold rolled seems to lend itself well to high temps, temp changes and metal tools to scrape off debris... The ceramic one, however, if you scrape stuff off of there, your definitely damaging the surface

    I have the Blackstone steel. It is so easy to take care of. Fast and easy to clean never had any issue with rust or anything and it’s 2 years old. I also live in an area that it snows during the winter. It has been rock solid and been amazing. I smoke my steaks on my pitboss then fire my blackstone up to sear and my smoked butter/garlic mix and do the reverse sear at the end of the cook.

    My brothers!! So going back a few years ago, your channel is why I purchased a griddle, and I think it's the best vessel for versatile outdoor cooking. You both know I cook on rolled steel (Camp Chef 600), and I haven't experienced cooking on the ceramic top. So, here's my takeaway...
    I own both a 3 decade old, very properly seasoned cast iron pan, and a modern nonstick ceramic pan. I'll make my comparison there. Brett, my eggs slide right out of my cast. Also, I get the utility of the ceramic. It certainly has its place. Yes, my cast requires more care, as dose my Camp Chef. Anyone who is passionate about cooking shouldn't care about the extra few minutes to do maintenance. A squeeze of oil on my griddle, or cast, and I'm good to go for next time. I do love that Pit Boss makes the same size top on both steel and ceramic! That's a great option!
    You both are so knowledgeable, and help this community in a huge way. Yes, you both always reach out and talk. Keep it up, it's only going to get better! ❤

    Man I love the channel, Bois! I can't help much on opinions on other brands, but sense a bit of a sponsor/promotion offer impacting this video. I was a guy that bought my first griddle, my timing lined up with y'all on the ceramic and PitBoss. Went that way myself and I've had nothing but problems, my cook surface degrades so fast on ceramic, idk what to do!! Flat top king suffered the same issues, he just transferred over to cold-rolled without even bringing it up! I've even had customer support replace my cooktop cause it was definitely not working right, yet I've had it replaced and still there are sections that just stick. I haven't done the baking soda clean on this new surface cause I figured that's what ruinedy last one. same thing plaguing my new surface. Wish I went with the best and got cold-rolled steel. I find myself thinking of ways to help/protect the ceramic surface, meanwhile, I can be maintaining my cold rolled surface just the same and getting results. My ceramic has done nothing but degrade, even with a replacement.

I’ll have to start saving some money to get the PB.

      Get the steel one... I have the ceramic and haven't ever had a steel, however, The ceramic is more sensitive to high temps, temp changes and sticking in my eyes. If you get steel, you can really season it up to be non stick and if you screw up, you can use steel tools to scrape off your mess. Whereas on ceramic, you can really only use plastic or silicone to scrape and it doesn't work as well.

    Having an issue, looking for any input. Just bought my first griddle (ceramic, pitboss sierra) and the heat drop is quite significant. I have to turn the dials all the way to high to get it up to 425. I put on the meat (in this case, cut up steak for stir fry) and it drops to under 200 within 15-20 seconds. I'm in FL, it's 85 degrees, no breeze. The meat is fully thawed and out of fridge for about 30 mins before it hits the griddle. During the cook, it barely gets back above 200, which is barely cooking, let alone searing. Heat regain is also slow. After removing the meat, it takes about 5 minutes to get back up to 400 (dials still on high). Is this normal or am i missing something? Thanks for any help or insight you can give!

I have a steel griddle and I always need to keep oil on it after I'm done because it will rust but that oil creates mold if I don't cook on it once a week or more.

    I have been using steel for 4 years so I naturally lean towards steel. However, the key is to griddle. Learn from videos like these. I think it is time for bacon, pancakes, fried eggs, omelet and hash browns. Where can you cook all of that at basically the same time - on a griddle. Either top will work. Gotta go.

Even a perfectly seasoned flat top will rust if you don’t use and oil it pretty often. Have you ever seen one of those silicone mats that are the designed to be the exact same size as griddle surfaces ? I have heard that if you properly oil your flat top and use one of those mats along with a regular cover it really helps prevent rust.

    Hey guys, I'm feeling like you're being a bit disingenuous. You say the ceramic is durable. How long had you had it before you had issues and had ro replace it or the top (can't remember which). Yes the steel requires some maintenance, but i don't worry about replacing the top even after 2 1/2 years. The outside could use some work. I bought a cheap stainless unit. The quality of the stainless shows. Its pitted and not so pretty any longer, but it cooks everything beautifully.

    • @waltwins
      @waltwins  Před rokem +2

      This is a bit discouraging - to say we’re being disingenuous? We’ve tried to share our experiences, good and bad. We’ve made videos sharing these. We can only speak to what we’ve seen, and have admitted that the the ceramic will only last so long. It is durable from our experience, though we never said it would out last a steel unit. Not sure what your intent is here, as your points about the steel are what we mention in the video. We feel there is an audience for both cooktops, which is the point of the video, as evidenced by the Pit Boss groups. We have a Sierra unit with nearly 200 cooks, a year and a half old, that still looks like it just came off the showroom floor. This is our experience. The unit we had issues with was the first unit in the country, we expected to have issues and know, unfortunately, that others will also have issues. We also appreciate that Pit Boss has a 2 year warranty. What did we miss, brother?

Pit Boss is aware that we will be open with our audience about our experience. Ultimately, only time will tell how durable the ceramic will be, as they are still new. If we see continued issues or problems, we will make them known as soon as we get the chance.
