Popeye’s Famous Fried Chicken Recipe
Ingredients:
Chicken Marinade:
10 Pieces Chicken Legs and Thighs
1) ½ quart whole buttermilk- full fat to marinate the chicken
2) 1 cup Louisiana chipotle sauce or hot sauce
3) 2 tablespoons Kosher salt
4) 2 tablespoons annatto Oil
5) 1 tablespoon dried dill
Spice Mixture:
1) ½ tablespoons Coleman's Dry Mustard Powder
2) ½ tablespoon Onion powder
3) ½ tablespoon Garlic Powder
4) ½ tablespoon Turmeric
5) 1 ½ tablespoon Cayenne pepper
6) ½ tablespoon Paprika
7) ½ tablespoon Cumin
8) ½ tablespoon Accent (MSG)
9) 1 ½ tablespoon White pepper
10) ½ tablespoon Kosher salt
11) ½ tablespoon Celery Salt
12) 1 tablespoon Sugar
Batter Mixture:
1) 1 cup All-purpose flour
2) 1 cup Cornstarch
3) 1 teaspoon Baking soda
4) ½ Spice mixture from the above list
Egg Mix:
3 eggs
1/4 cup water
1/4 tbsp cayenne
To Marinate the Chicken:
In a large plastic bowl with a tight-fitting lid, combine buttermilk, Tabasco sauce, Annatto Oil, dried dillweed, and kosher salt with a small whisk. Add the cut-up pieces legs and thighs of a chicken to the large plastic bowl making sure to submerge the chicken in the mixture completely. Refrigerate 12-24 hours for the best results. Pour off the chicken marinade, shake off excess buttermilk mixture from the chicken. Do not rinse the chicken.
To season the chicken:
In a small bowl, combine all the spices. Use ½ of seasoning to generously season both sides of the cut-up whole chicken. Then reserve ½ seasoning for the dredge mixture below.
To batter the chicken:
Combine all-purpose flour, 3/4 of a cup of cornstarch, one teaspoon of baking soda, and the rest of the spice mixture from above. Coat the chicken in the seasoned flour. In a medium glass dish, combine three eggs, 3 tablespoons of water, and 1/4 tablespoon of cayenne pepper. Dunk each piece of the coated chicken into the egg mixture and then shake off the excess egg mixture. Coat each piece once more. - Jak na to + styl
Tried this recipe, the breading didnt come out any where near what popeyes tastes like but let me tell you, ITS BETTER! Great job!
Aww. Thanks so much.
This is the comment I was looking for! ❤️
I concur. I used skinless, boneless thighs and the breading didn’t resemble Popeyes at all but I don’t care because the taste was amazing!! I omitted hot sauce and added pickle juice to the buttermilk brine and allowed it to marinate overnight. This chicken was so juicy and seasoned w/ a kick! The finished product needed no sauce! It was that moist and flavorful. Just a little mayo on a bun and pickles for garnish. It’s really better than Popeyes. I think I’ll have better luck with skin on.
@@BrownGirlsKitchen Best chicken sandwich I’ve ever had! Thank you for the recipe.

Hahahaha. Amazon comment is funny. Yes. Go to Mexican or asian grocery. Get Annatto seeds and put some oil in a bowl and add that seed. Keep aside for day or two. U got annatto oil. Cheap. Lol.

You will always have haters lurking around on web pages giving useless advice, your recipe is spot on, it is the people that can not follow simple instructions that is why they're messing it up and crying about it. They simply can't cook, it's not your fault.
Thanks so much. I understand what you saying. I don’t understand sometimes either. Why so much hate for a simple fried chicken. Lol. Thanks for the support. I appreciate your kindness
This Recipe is the bomb I never make fried chicken no other way. Comes out so delicious. Thank you for this recipe.

The best I’ve seen thus far. Thanks for sharing. So how did you get the ingredients cause I know they don’t share their recipe.
thanks so much.. it is truly delish. one of my follower gave me and swear by it.. so i gave it a try.. i promise you i never make any other chicken but this.. i don't know if it is exactly like popyees. but who cares.. it is the bomb.. hahah
So I just tried this recipe because popeyes is my favorite fried chicken spot. The texture was wrong because I'm sure I used the incorrect oil or had temp issues. The flavor was not quite like popeyes either. That being said.... BEST FRIED CHICKEN I've ever made. This is my new go to for chicken recipes. Cant wait to try for chicken tenders or a chicken sandwich
What kind of oil did you use?
@@luissanchez7134 vegetable. Should have used peanut oil
Soo glad. Yes they are
Soo good!!!
@@justinogden5290 yeah try canola if you can't get peanut oil. Peanut oil is definitely superior for frying though

@@BrownGirlsKitchen going to make this one this coming weekend
Good
I love me some fried chicken. So it's my favorite since I was very young. I will try this recipe 😋. The only thing I never heard of is annatto oil. As far as the spices... I have it. I'm smiling because I can already taste it right now. Thank you so much 💓.
ehh you don't need that oil.. i knew you had them all :) awesome.. please do make it let me know how you liked it
@@BrownGirlsKitchen I will definitely let you know.
@@catrinawatkins7604 how did it go?
@@samtheham3187 I tried it and it was very good.
@BrownGirlsKitchen, annatto oil is new for me too. Da sto don't have it. Can you share what brand you use & I can see if Amazon got it?
I cannot control myself, I love Popeyes chicken. I've tried the chicken sandwich didn't do to much for me. now I've got to make this. when I make my grocery list this weekend. Question I'm trying to cut down on cooking with oil, can I grill this in the oven or bake it.?😮
I will try this ingredients for my small buseness.
aww. do a test run before you make bulk.. see if you like it.
I worked at Popeyes and it’s crazy how you damn there got all the ingredients correct, even the double batter great job✨
You signed an NDA to not tell us the secret??? rofl! This is how they make it right
I thought they didn't tell employees the ingredients in their spice mixture.
@Jay Philip Seo Really?
The seasoning comes pre packaged. 🤷🏽♂️
@@ecoyt1 That's what I was thinking.
Thanks you
Thanks soo much
Looks DELICIOUS ♥️♥️♥️♥️
Thanks soo much 💜💜🥰🥰
@@BrownGirlsKitchen your very welcome 🙂♥️
Hello! Do you need to add the hot sauce? I prefer less spicy food but if you need to add it I totally understand!
No not at all. Just do as spicy you like.
Great recipe! I will definitely try this!
Question: is it really spicy? If so, what adjustments should I do for mild chicken?
No. Not spicy. You can just omit of you want
@BrownGirlsKitchen how do u make the spicy recipe
Hmm 🤔, I don’t do measurements for chicken but I’m interested to try some of these ingredients. Looking forward to this; thanks for sharing
I loved this recipe. I don’t even care if it is authentic or not. This fried chicken was yummy
Mix Well With A Spoon Or A Whisk
Evenly and Mix Until
It Well Combined And Seasoned

How was the recipe
Good
@@BrownGirlsKitchen I meant Barbra but this chicken looks amazing so imma try cooking it.
Cool
Better than my local Popeye chickens... 💖👍😃
Thanks so much
I can care LESS if this tastes like Popeye's. As long as it tastes good. Thanks for taking your time to share.
You make sense, where what if it's better than Popeyes, why look to Popeyes then?
I only use peanut oil for frying chicken just like Maryland fried chicken restaurants do. What a difference it makes in the taste.
Yes. Many do. It has higher frying temperature. But i am a thing for peanut. It doesn’t like me. Lol
I only use lard to fry in.
@@mrequi1 I read Popeyes does the same thing
First step of the recipe is to watch this video the day before you want to actually make chicken. 😂
What kind of cooking oil are you frying it in?
My oil is heating up right now to make this chicken I cant wait to try it! Thanks for sharing this recipe. 💗

Will this recipe work on an air fryer?
New sub here, I'm going to try this recipe out today...
Yayyyy. Thanks for joining my channel. I so appreciate you plz do let me know how u liked it.
@@BrownGirlsKitchen It was really good! I adjusted the recipe a bit, because I had already seasoned the chicken before finding your video, but it was still very delish!
Now I love your chicken skin. Looks like Popeyes 😋
Thanks so much. 💕💕💕. This tastes amazing
Omg!!!
I like a little heat but 1 1/2 tbsp of cayenne pepper is way too much for me! I love Popeyes but I only ever get the mild chicken. I would only use a fraction of the cayenne and I use Frank’s Red Hot with buttermilk for my marinade.
This isn’t that hot. Most of it stays with the batter. But hey you do you.
You never stated the temperature of the frying oil when cooking the battered chicken.. What is it if I may ask? Thank you in advance.
350f always frying oil temperature.
I picked up an order of M.B.'s otw home to watch this video and it was enjoyable but a lot of work.
it is a lot of work
How do you make it mild?
Mmm the sound of raw chicken being mixed in buttermilk.
Hahaha. All chickens must be swimming on it. Lol.
I will have to try dis recipe
yes you do please let me know
Thanks brother. Pray for me. Going through tough times. 😞
Just life
@@BrownGirlsKitchen ok
Working hard with no results. Praying but nothing changing.
Crust turned black nearly immediately. Worried it was the sugar. Also my oil drifted up to 390F. Don't want to remove sugar, so thinking next try I'll start with 325F oil. Any other suggestions?
Your oil was wayy to hot. Sugar isn’t the problem. So plz cook at least lower than 350
@@BrownGirlsKitchen Second try last night was at 300F or less, though we had difficulty keeping it up to that temperature and it often dove down to 200F or less. Not black this time but still darker than regular Popeyes or your chicken in the video.
I inherited a deep fryer from my Mom, which I've never tried. Will try that next time. This is also the first time I or my wife have tried deep frying chicken. Our experience had been limited to fried fish.
Wow. That is just very weird. What flour are you using. May be thats why. Paprika use less. That creates color
