    In 1971 I was 16 years old and got my first job at KFC. They sent me to “chicken school” where I became an Extra Crispy specialist! Today I’m 64 and could easily step into a KFC and whip out a 72 piece rack of Extra Crispy chicken with no problem. These people in this video are experts at making phenomenal chicken. Love them all.

      Margaret Adams I since I don’t know today’s practices, I can’t speak with any authority. But in 1971, at the end of business day ALL unsold chicken was thrown in the dumpster. Absolutely none was saved for any use. I used to take a bucket of chicken home, but after a few weeks my parents begged me to stop! Too much of a good thing. I worked in a few restaurants during my high school years, and I’d have to say KFC was by far the cleanest. We would go through an entire case of Comet cleanser per week scrubbing the kitchen. Cross contamination with chicken can make people very sick or even kill them, so we were extremely diligent about the kitchen and serving area. If you crossed from the cooking area (raw meat) to the serving area (cooked meat) without washing your hands, you would be fired on the spot. I kid you not.

      One franchise can ruin it. I had a KFC near me once, and the temperature wasn't right when they fried, because everything was oozing oil, buckets full.

      Hello Mr treble, can you tell me the difference in preparation between the crispy and the secret recipe? is that true thar it's the same flour just double breading for crispy?

      Jesus Rodriguez the original uses the secret recipe seasoned flour, while extra crispy has its own recipe flour. Extra crispy chicken is marinated for 24 hours before using, which and flavor and tenderizes the meat, original recipe doesn’t marinate because the cooking method (pressure cooking) does it. Original is double breaded, while extra crispy is triple breaded.

    I fry mine in 1/2 peanut oil, 1/2 bacon grease, at 350 degrees
    for 12 minutes.
    The corn starch I add to my flour and seasoning makes it crunchy.
    All seasoned cooks know this, but won’t tell you.
    I did research on the internet to find my perfectly delicious recipe.

    Soak in whole milk 2hrs. Or buttermilk-BM(I personally don't like the sour backdrop BM has). Pat dry. Season with salt, pepper, garlic powder, onion powder, paprika if you like spicy you can add hot sauce to milk marinade or cayenne pepper with other dry seasoning. Let sit 30 mins to 60 mins. All purpose flour and fry.

      You don't use anything wet after the chicken sits before you flour it? I do it about like you but egg and milk wash.....flour and rest in the fridge for 30 before I fry. Makes it crispy

      Using corn starch with seasoning for the first layer before the egg dip makes it very crispy, and sticks the batter to the chicken really well. I put some matzo meal in the last flour to give it a thicker texture and crunch. Corn flakes are great, too. Come to think of it, Popeye's must have corn flakes mixed into the batter, that explains that texture. And I'm sure they use buttermilk, which makes everything have that buttery taste. But it's just too greasy to eat. All their food is. I don't like the sides.

    Seasoning just right and crust that melts not breaking molars. People tend to over season and not know how to flower chicken correctly. I found seasoning the flower is the best, but if you want that extra flavor inside marinade. Remember Popeye's and churches chicken comes already marinated they just use a garlic onion season batter on orginal and a black pepper cayenne pepper for spicy. Key is to have everything "COLD" that's what makes the flour stick to the chicken!!! If everything is warm room temp, then the flour will flake off in the cooking oil results ugly ass chicken looking uneven hope that helps... #CHICKENMANAGER

    📌 Starting @11:23 Cook is dusting the chicken of excessive flour over the fryer instead of the pan. It doesn't make sense to do that. This results to adding unnecessary flour to the oil. The pan is supposed to catch the extra flour, not the fryer. This will result in flour settling at the bottom of the fryer causing the chicken to taste burned over time and also more frequent oil change. You're basically cooking in dirty oil because of the sediments at the bottom of the fryer. Memphis is in the building!🍗✌🏽💯

    I have tried a lot of fried chicken, and there are a lot of good ones , and a lot of bad ones. The best came from my Grandmother back in the 1960's. This chicken was cooked in front of us using shortening or lard, and cooked in a cast iron, deep-sided skillet, not deep fried. Chicken was different then. The chicken came out juicy, and the crust had a bottom char that made you want to scrape the skillet and eat it. Great video. Thanks

      @@ruthertagala a better bird and a cast-iron skillet is a start. But he could mean the style of fried chicken, most people knowing only KFC style breaded or no-breading. There are so many more ways to get amazing results with chicken and they all have different end results.

    Love the way different oils mixes create different flavors along with different smells. Different temperatures create different tenderness. Dry mix, wet mix. Love fried chicken. I bet all the chicken showed in this video is outstanding. I wonder if all the different chicken that was fried was put into a bag and blind tested if they could tell the difference.

    New Orleans style fried chicken is spicy fried chicken that is marinated in a mixture of hot sauce and buttermilk and is coated with flour that has all kinds of spices and cayenne pepper in it.

    The secret to fried chicken is before you do anything, soak it in buttermilk.
    Then later you pat it dry. The dryer the better.
    Everyone has their own seasoning stuff.
    Soggy chicken is caused by it being too wet. The egg wash coats it. The chicken doesn't absorb it. Then flour it well until you see a wrinkle.. then put it in oil.

      You do not need to pat it dry. We pull it straight out the buttermilk and into the seasoned flour and it comes out juicy

    Hello I used to use a pressure cooker for all my Fried foods different fried foods I'm from North Carolina Every Different recipes of Fried Chicken
    seasonings garlic salt seasoning black pepper cayenne pepper celery unsalted seasoning and eggs and milk also all purpose flour
    Like y'all do we clean the chicken well taking the fat off in it marinated overnight with the egg and milk and seasoning over night Oil we use Crisco oil or vegetable oil I know overnight is a little slow at least give it 3 hours to marinate then if you have a pressure cooker or deep fryer 350 high until golden brown you'll see the chicken come up yummy 😋 Good time ! If you want the recipe I would tell you how much putting each ingredient list how much to put 😃

    Southern bird was the best fried chicken I've ever eaten. It was based in Tuscaloosa Alabama, I've traveled the entire country and parts of the world, the only place comes close was a little shack called jb's fish, this guy must've worked for him.

    making good fried chicken is an art, seriously. There are so many factors and what most places screw up is the oil temp, and how much the oil is used because if it's a busy restaurant, the oil wont be a consistent temp thoughout the day.

    Great video. I guess I've failed with fried chicken 'cause I get the oil too hot. And I guess I have to let the chicken get to room temperature if it's going to get done in 12 to 15 minutes at 340 to 350 degrees. Gonna try again this weekend!

    It appears that all or nearly all of the establishments agree on buttermilk marinades and then coatings in seasoned flour. So I'm a try that method at home and see how it comes out. I like the NOLA or Popeye's kind of flavor, so that's what I'll be trying to replicate as closely as possible.

      Add flour or cornstarch to that buttermilk then the dry flour last. Make a slurry that will stick a thin coat to your finger then drip in dry flour seasoned mix.

    My first job was at the Popeyes at Williams and West Esplanade in 1980. Good times and great chicken!
    TheDailyMeal did a review of the best fried chicken places in America. Now that there's a Gus's here, 3 of the top 4 places are in New Orleans!

    Willy's and Mother's are hands down great chicken. But I will have to give it up for the chicken at Brother's Market. The chicken is super moist and the crust has good flavor.

      Will 88 Brothers is cheaper so I go there when I don’t feel like paying the outrageous prices Popeyes is asking for now. But I still prefer Popeyes. Brothers is good though.

    One year at a Mardi Gras parade i actually got a fried chicken leg off a float. It was really good.
    I used to live in the Denver area for awhile and at the airport going back after being in New Orleans for Mardi Gras there was a large group sitting together cutting up and stuff. They had a box of fried chicken and i asked where they got it and they said the hotel made it up for them and they gave me a leg. They were the group The Coasters. Fun timesmany years ago. Love that fried chicken.

    This is great , award winning fried chicken! one of the best - she says she cuts off the fat and "cleans it up." Marinade 24-48 hours. You aren't eating fried chicken for the health - just dig in and enjoy. Coming from someone who has actually eaten this exact chicken - it is sublime just like others in New Orleans. It's a science. That's why we can never duplicate at home - it's a combination of seasonings, oils timing, etc... They are doing it right. It's a passion down there! If you want healthy or better then go for it...

      +Pink Turtle most chefs ( and they are trained)do not wash their chicken BTW - it's optional - cooking takes care of killing any bacteria and to most chefs - washing takes away and waters down the chicken.

    In my opinion my way of seasoning is better
    I only use pepper and lawry's seasoning salt it's pretty much everything they use on their chicken in one but you don't taste it the onion or garlic you only get a mildly spicy flavor

    NOLA.com First job @ 14 was in a restaurant. Taught me "Thank you & Please not to mention the phrase "Would you mind doing this or that?" Visited The Manager a couple years ago, who had retired from managing restaurants. He & His wife were directing their daughter's fried pies factory. Had been nearly 50 yrs. since we'd last seen each other. First thing he asked me was... What are you selling? i quipped to him 'Respect' are you in the market for any? Had to mention the name of the restaurant, before he recognized me. He then asked... How many units, do you have to sell? i said every year since i'd seen you.

    Just rinse your chicken, put on a chopping board, add salt, pepper, garlic powder, put all purpose flour in a bag, shake it up, fry it (AND THIS IS THE IMPORTANT STEP - FRESH CORN OIL - put it in pan when the grease is hot, then don't touch it until it crisps up and then turn it over. The secret is to NOT touch the chicken too much with a tool. I've had 63 years experience with frying chicken. I get raves from everyone who tries it. It's really simple.
