How to Deep Fry Whole Duck with Maple Leaf Farms

  • Maple Leaf Farms shows you how to deep fry a whole duck using a turkey fryer. Deep frying a Maple Leaf Farms duck will give it extra-crispy skin with moist meat. Always use your deep fryer outdoors and wear protective clothing when around the hot oil. Be sure to check your thermometer often! The duck is done once the internal temperature at the leg joint reaches 180F. Let the duck rest for about 10 minutes before serving.

    9 minutes per pound is absurd. I followed this advice at thanksgiving deep frying 4 ducks and 4 turkeys and the ducks were horribly over done. Just fried 2 more yesterday using a remote temperature probe from Thermoworks. Sprinkled Chinese "Spicy Bake Mix" on the outside and inside of the duck and let marinade over night......Oil at 325......took the ducks out when thigh temp reached 170 degrees......roughly 20-25 minutes....so 4-5 minutes/pound. Came out wonderful.

    Probably would be better to inject the duck instead, and dry season it with Cajun seasoning after frying it. The dry seasoning you put on before is just gonna burn up and make the peanut oil dirty.

    Looks great but isn't 180 a bit high for pulling out of a fryer? 155 should carry over to 165 easily. Isn't 180 just over cooked?

      Did you try it? I was thinking the same thing that 180 would be over done but maybe it has a lot of connective tissues or fat to cook cause it’s a water bird? This is the only decent video I’ve found on this and I was told to fry a duck for thanksgiving so I think I’m SOL
