  • Learn how to stretch pizza like a pro with these techniques! If you’re frustrated with oblong or oddly shaped pizza, you need to give these methods a try:
-Keep the dough’s shape when taking out of the container
    -Dust all over with flour/cornmeal
-Pat lightly all around to make sure it flattens out slowly and stays dry
    -Define the crust
    -Toss in the air
    -Dust with flourmeal mixture throughout
-Get ready to place onto pizza peel!

Hi Tom! What temp works well in your Versa for this specific dough type? I’m assuming because of the oil content, slightly lower than a full flame?

I like to do full flame for a little char! I set it to high and make sure my stone temp is right around 700°F. Cooks the pizza in about 3.5 mins

Great videos! I love making pizza, but really struggling. What size pizza does the 9.5 oz dough balls make? I am getting them to about 10” any larger they tend to shrink back to the 10”. The center is extremely thin and doesnt have any ability to stay firm. It still tastes great, but not getting the look and texture I am hoping for. Any suggestions? Thanks!

Hi, sorry to get to you so late! The 9.5oz balls make a thin 12". I would say if you want it a thicker, sturdier 12", go for 11-12oz. Just keep in mind that this will bring a 4-dough recipe down to 3.

Do you have a good dough that’s for a home oven?
