The point I believe they were trying to make in the video is how Japan created those "outdated and now-redundant" F2's, as you called them, from the carcasses of F-16's and made them far more capable and far more deadly. Squeezing much more out of a design thought to be at the end of its usefulness by milking every bit from them. I equate it to sharpening the claws on a tiger, redundant? Perhaps... But effective.
Also, you do realize that the heavily modified F-2A Super Kai was in the running for 5th Gen as well yes? While the design may have lost out to the F-35, it wasn't due to it being "outdated." If anything it showed the design still had room to grow.
But, as you said, Japan is currently in possession of F-35's, with more on the way....I wonder just what modifications they will make to those over time? If you think none, then you are a fool. Perhaps when the modified F-35's drop I'll equate that process as sharpening the claws of a dragon? It has a nice ring to it.
