Spanakopita using Puff Pastry Dough

- Ingredients:
3 tablespoons unsalted butter
1 1/2 large onion diced
3 garlic cloves diced
2 (10 ounces) boxes of frozen chopped spinach thawed and squeezed dry
1 cup feta cheese crumbled
3/4 cup Parmesan cheese, grated or shredded
4 large eggs beaten
1 tablespoon dry bread crumbs (plain)
1 teaspoon salt
3/4 teaspoon white pepper
1 large egg, beaten with 1 tablespoon of water
(You will need a total of 5 large eggs for this recipe, I separated them like this so you would know what to do. Please read the recipe completely before starting.)
Instructions:
1. Preheat Oven to 375°. Line a large baking sheet with parchment paper.
2. Dice your onions and your garlic.
3. Warm your pan and add your butter to the skillet. Then adding your onions and cook until translucent. Then add your garlic to the onions and cook for an additional 3 minutes. Remove your pan from the heat and allow the onion and garlic mixture to cool to room temperature.
4. Beat your four eggs in a large bowl. Once the onions and garlic are at room temperature, add them to the beaten eggs. Next add your spinach, feta cheese, parmesan cheese, bread crumbs, salt and pepper to the mixture. Mix well with a fork.
5. Beat your last large with a tablespoon of water and set aside.
6. Place one sheet of your unfolded puff pastry dough on your parchment paper lined baking tray.
7. Brush the edges of the pastry with your egg wash (the water and egg mixture).
8. Spread the spinach mixture over the puff pastry being sure not to spread into the egg mixture around the edges of the pastry.
9. Cover the top of the spinach with the second pastry dough (you may have to stretch the dough a little to make sure it can cover the spinach to the edges). Press edges together with your fork, make sure the mixture is sealed well.
10. Breast only the top pastry dough with the egg wash, be sure it doesn’t drip all the edges. Now cut a few slits in the top of your pastry dough with a sharp knife.
11. Bake for 30 to 40 minutes or until it is brown. ENJOY!!😋
