    Just a little bit of information for you guys (esp the westerners)
    Firstly, wagashi is made of mochi and pastes (red bean chestnuts etc), Mochi is made with rice flour. There is almost no sugar at all. It tastes sweet and it’s supposed to be eaten bits by bits with matcha. Have u drank matcha before? That shit’s bitter as hell, esp for someone like me who has a sweet tooth.
    Secondly, no you don’t have to know how to eat with chopsticks to eat with this stick. The good thing about the stick used in the video is that it’s flat, which makes it easier to cut and poke it using the flat side. Don’t worry. Mochi and red bean paste ain’t soft enough to drop off the stick that easily.
    Thirdly, using hands to handle food ain’t a problem in asia. In fact, go to any traditional food store in asian countries and you won’t see a single glove lying around. We wash our hands properly and make sure our work table is clean before cooking. We take food safety seriously even with or without gloves. A little bit of germs ain’t gonna kill you too. The thing u need to worry about is salmonella and a dusty messy kitchen. Also there won’t be finger prints since your hands must be covered in flour before handling mochi. It’s friggin sticky so you have no choice. That also means there won’t be finger prints.
    Fourthly, mochi is not a jelly like substance. If you’ve eaten a jelly like japanese dessert, you’re most likely eating yokan, which is made of agar agar and sugar(as in brown/black sugar) and any other asian flavourings. If you haven’t try it, you should. Personally speaking it’s my favourite food. Mizu yokan is da best.

      I've eaten lots of wagashi in my time. I think it is very sweet! You add sugar to the beans and to the dough, which contains beans and glutinous rice flour. The sweetness of these confections make them a perfect compliment to the bitterness of maccha. Just typing about it is making me hungry for some!!!

    "Wagashi" are primarily intended as a complement to the taste of green tea, served at traditional tea ceremonies. Therefore, the beautiful appearance is admired as well as the taste. Quite often, the season of the year or the nature such as flowers, birds, the moon, etc... is expressed in its appearance.
    Also, very healthy, as artificial flavors are rarely used so as not to affect the taste of tea.

    People who believe gloves = clean are beyond naive.....lol. Trust me when I say on average, it much more disgusting than people handling food without gloves. They have less initiative to wash/change gloves after handing unsanitary items.

      If they only knew how much germs are actually in their own mouth.
      This is one of the reasons people brush their teeth when their teeth feel "fuzzy" that is a build up of bacteria on their teeth.
      I bet they have no problems with eating their breakfast before brushing their teeth in the morning after all that timr during the night where the germs have a chance to build up...

    ゴム手は着ける過程に素手で汚染してるしゴム臭く不味い。

      That's exactly what I'm thinking. This is a lot of "handling" for what is basically a morsel of food. These are visually appealing, but I've heard they all taste basically the same and have the same texture. Not really what North Americans would consider a delicious dessert, but just sweet and soft textured. I find the Japanese don't concentrate so much on taste as they do visual presentation and texture, which seems to be true for a lot of sushi as well. There's something to be said for that, though, since overweight people are not common in Japan. Maybe we should play with our food more.

      If his hands have been washed then why does it matter? Everything he is handling is made of the same thing, it's just different colors. Japan is one of the places I would worry the least about food with the high standards they have and how extremely cleanly they are.

      You don't have to be rich or go to Japan. You can order these Japanese snacks/deserts on Amazon, or buy them in local Japanese stores.

      If they had a wider variety of flavours than sticky rice and red beans to deal with they would not have developed this retentive method of shaping them. Same with macha, if it did not taste like soap they would not have developed a ritual for drinking it.

    Fun fact: The wooden chopstick being used is called a "kuromoji". It's used to serve the wagashi to the guest. It's also what you use to eat said sweet. In some cases, you wet the kuromoji slightly as doing so imparts a slight fragrance. After each candy, you replace it.

    自分も和菓子職人だけど、世界の人に知ってもらいたいのもあるけど、
    日本人にも改めて和菓子の良さを知ってほしい。
    素手で作るから食べたくない。あんこ好きじゃない。
    そういう言葉を凄く聞くと悲しくなるのと同時に
    なんとか和菓子の良さを伝えていきたいなと本当にかんじる。

    I had the opportunity to try a much less costly wagashi while i studied abroad in Tokyo. The taste and texture complement the green tea perfectly, and the one I tried even had a very small dot of a salty/savory flavor, which only added to the experience. i hope i can go back someday.

    素手でベタベタ触らないでって言ってる人達日本の和菓子食べてお腹壊した人も多少入るだろうけどあんまりないし…食中毒にも掛からないぐらい手を清潔にしてるってことじゃろ?それでもあーだこーだ言う人達は潔癖症アピールか本物の潔癖症の人だと私は思っている!!!
