- Wagyu Picanha. I've been wanting to try this for a while now. Picanha is one of my favourite cuts of beef. Add Wagyu in to the mix and its sure to be a winner right? Absolutely right! This was outstanding and a real treat. Of course, with an expensive cut of meat, you want to make sure its cooked to perfection which is where my trusty Thermapen DOT and Thermapen One come in. No more guessing when food is cooked, just probe, read the temperature and remove when ready!

Hello Mate, hope alls well. That looked absolutley amazing !! Gav's shown me many of your creations over the years and I need to get involved. Due a new BBQ anyways so thinking ill get a smoker capability also, so curious what you'd recommend for a newbie. Can I get both a BBQ and smoker all in one? Is that what your KJ does? im starving after watching this vid... Plus any guidance to get me going would be great! P.S I already have the meat temp device ;) That Bluetooth one is sick!
